    Hi Guys

    so - apart from deluding myself all day that i am a fabulously famous best selling author:D i have also had to knuckle down and do the "make do and mend" stuff.

    For ds's lunch tomorrow it is pitta breads and hm hummus - now i know we've chatted about hummus before, but i don't think i have raved about my fabulous pitta bread recipe.

    this makes 8 standard sized pitta breads - but unlike the flat doughy supermarket ones - these truly puff up and give you fabulous spaces for stuffing in a big fat filling.

    ds likes these cut into soldiers for dipping in his hummus - so i make them the night before, store them wrapped in a clean tea-towel and then dampen them under the tap in the morning and nuke on medium for about 10 seconds to refresh them.

    a quick chop and then i can lob them into his packed lunch box with a pot of hummus from the fridge, and apple, some carrot sticks and something from the freezer baking box. Taaaaaaadaaaaaaa - lunch for one littlie.

    HM PITTA BREADS

    3 cups bread flour (I use LIDL)
    1tbsp olive oil
    1 cup water
    1 1/2 tsp salt
    1 tsp sugar
    1tsp yeast

    throw it all in the breadmaker and set it to the dough setting.

    when its done, take it from the bm and knock it back gently.

    divide into 8 pieces and roll each piece into a ball.

    cover the balls with a towel and leave to rest for 10 minutes.

    preheat your oven to 230 c and grease some baking sheets.

    flatten each ball in turn and roll into an oval or round about 5mm thick.

    NOTE:

    this dough is not a soft, silky and elastic white bread mix - or even the sloppy frothy ciabbatta we played with earlier, this bread is TOUGH - its like rolling out leather, but just lean into your rolling pin and take no prisoners:rotfl:

    sprinkle each pitta with a little flour and leave to rest for another 10 minutes.

    place the pitta on the baking sheets and bake for 5-6 minutes only - they will puff up like puffer fish and go a golden brown.

    remove from oven and wrap in a tea-towel to cool.

    these 8 pitta cost about 20 p to make - but my kids prefer them to the shop-bought ones so i will keep making them a while yet:D
