  • mash potato can be cooked and frozen

    Frozen mashed potato is lovely! Whenever I make mash, I always make extra, as it is such a treat to get out of the freezer after a long day & particularly a long winter's day. Cooks in no time & keeps its consistency amazingly well.

    Leftover chilli, wrapped up in tortilla wraps, put in a dish and cover with grated cheese and the cheapest tortilla chips ( mr T's 25p a packet) heat well and serve.
    I do quick baked potato too, 4-6 mins in the microwave then 1/2 hour on no 7 in the oven, Pre-heat the oven while they are doing in the microwave. Add grated cheese and beans.
    My emergency dinner is a couple of tins of soup and hot rolls (vacuum packed part baked ones), follow it with tinned rice pud and jam. My lot love it.
  • What are everyone's favourite HM 'ready meals' that can be taken out of the freezer in the morning and ready fairly quickly in the eve?

    I make pasta sauces, chilli, curies, casseroles in bulk, and freeze in meal sized portions ;) If I fancy cooking, I can rustle up a risotto while I have a cup of tea or glass of wine.

    As this has fallen from the front page of OS, I'll add it to the existing Batch Cooking thread to give you more ideas.

    I have taken to batch cooking to save money and time, I have so far made cottage pie, lasagne, chicken stew and beef stew and now I am stumped for ideas.

    What do you do?

    I am looking for cheap ideas, six or so medium portions per each batch.

    Any ideas - thanks!

    Bolognese sauce with a few lentils chucked in is a tasty one. I also batch-bake double shortbread or biscuits. I am experimenting today with having the shortbread in the baking tray , popping it straight in the oven immediately after taking out the roast and turning the oven off. It should be hot enough to bake for ten minutes or so.
    Just tried the above experiment. The shortbread needed a little more heat so I had to put oven on for five minutes. Still, if I put biscuits/shortbread in and turn oven off early in future, I should be OK

    i've done a big batch of chilli today, just put 7 largish portions in the freezer for hubbie. Bolognese is another good one, i also do pork casserole. Homemade ready meals are so good to have and far more nutritious and better quality as well as cheaper than those you buy aren't they?

    Thanks guys - I got 14 portions of lasagne and chicken stew for about £15.00, so just over a pound each - 10 minutes in the microwave and they're cooked when I come home from work!

    But I need a little variation in my diet lol!
  • i always do mega portions for freezing, of pork and bean casserole. soak the beans overnight. slow cook them with cut up pork, onions, sage and a nice stock. and there is lots to freeze as well. and it freezes/re heats very well.

    Could you tell me which beans and cut of pork you use please and some instructions if I ask very nicely indeed :D
