    raspberry vinegar makes an unusual salad dressing (use almond or hazlenut oil or a tasteless one) but it used to be made specifically to be used in a refreshing summer drink. This old recipe was more of a raspberry vinegar syrup, but you could make some plain syrup to add to a tablespoonful or so of your vinegar in a glass of plain or fizzy water.
    A spoonful combined with a spoonful of honey or sugar and hot water is supposed to soothe a sore throat or chesty cough.
    Raspberry vinegar is very good sprinkled onto a salad of sliced strawberries and thinly sliced cucumber, give a good grind of black pepper over it but no salt.
    If you grow herbs use some later in the year to flavour the wine vinegar -

    Herb Vinegar

    Herbs can easily be preserved in vinegar, which make excellent salad dressings. Rosemary and basil make particularly good vinegars. Simply wash the herb in cold water and crush it slightly to release its flavour. Then push into a tall, clean, sterile bottle and fill with warmed vinegar (wine and cider work best). Seal the bottle and leave to infuse for a few weeks before use. You can then strain the mixture through muslin or filter papers to separate the herb from the vinegar. Store the vinegar in a sterile airtight bottle out of direct sunlight. "

    How to make dill vinegar:

    A classic herb vinegar that can be used for salads and sauces. This process can be used for other herbs although in most cases it is the herb leaf that is used rather than the seeds.

    Ingredients
    1 pint white wine vinegar
    2 tablespoons of dill seed



    Method
    - Put the vinegar and the dill seeds into a suitable bottle.
    - Cork tightly and stand in a cool, dark place for three weeks.
    - Before using strain the vinegar into a clean bottle."

    You can use any wine vinegar instead of lemon juice in salad dressings, but start with a third of the quanity and test for flavour.

    I like to make potato salad, for two people.
    In a large bowl combine a dessertspoon of mayonnaise, two teaspoons of wine vinegar, three finely chopped spring onions ( or chives, or some chopped salted capers etc).
    Boil salad pots and whilst still warm (important bit) add to bowl and allow to cool.

    What can i do with the 2 bottles of white wine vinegar i found lurking at the back of my cupboard yesterday?? No idea why i have ended up with 2, but in the spirit of not throwing food away i would like to do something with them:D

    NO! White wine vinegar is too good for cleaning with!

    or use it to make your own herb vinegars for yourself or to use as gifts http://www.io.com/~wilsone/herbalvinegar.htm
    Remember, vinegar will keep pretty much for ever, so think that you have a bulk amount for future use rather than something which must be finished up or thrown away.

    Salad dressings!! Mix with EV olive oil, salt, garlic and add herbs, mustard, honey etc to taste depending on which dressing you prefer.

    My mum is not really into wine, but knows that I like a good tipple. She bought a couple of bottles of white for me & after watching some programme decided to set it aside to 'mature' for a couple of years.

    When she gave me the bottles last month, I opened one, gagged and really struggled to fininsh the mouthful. As she was there, I had to drink about 1/2 a glass:eek:

    Apart from chucking it down the sink, which was my first instinct, what can I do with it?

    It may be cheaper & easier to empty the bottle, but she was so excited about getting me something like I don't want to unless it's the only option.
