Hi, i have just used some Cider vinegar for a salad dressing and it was still ok. The use by date was 07 1994. It was hiding right at the back of the cupboard. You can also use the vinegar when making Cakes. I can't think which cakes i have used it in but i could look it up if you want.
Marinade is another thing to use it up that just sprung to mind. There are quite a few things but i just can't think at the moment. I'll get back to you if you need more help.

Here you go - doesn't use much vinegar and you can't taste it in the cake.

Norfolk Vinegar Cake(an eggless fruit cake)

    Rub together
    8 oz butter
    1 lb plain flour

    Stir in
    8 oz sugar
    8 oz raisins
    8 oz sultanas

In a large jug measure out
    8 fl oz milk
    add
    2 tbsp vineger
1 tsp bicarb blended with 1 tbsp milk
    Add to cake mixture,stir well

Spoon into a greased and lined 9 inch tin
bake for 30 mins at 180 c,then reduce temp to 150 and bake for another 1-1 1/4 hours until a skewer comes out clean.
  • Thanks! Will try this recipe out soon! I presume it's probably best to use the white wine vinegar?

I suppose that's the one I would go for, but to be honest I don't think it makes any difference. I don't think the red will colour the cake, there's not enough in the recipe and as I said you can't taste it:)

BTW you can use different sugars eg demerara, soft brown, which will make a darker cake and you can vary the fruit. Dried apricots are nice, or add nuts and seeds, or chopped up chocolate......mmmm, might go and make one;)

edit: coconut and cherry is good too

Lurking in my cupboard I have:

    2x White wine vinegar
    Raspberry red wine vinegar
    Balsamic vinegar

The obvious use for Balsamic vinegar is as a salad dressing but I'm completely stumped for uses for the others other than Ariabata pasta sauce. Any other suggestions?
