  • Im trying to eat vegetarian at least twice a week,do you have a fantastic vegetable lasagna recipe?
    I cooked risotto for the first time this week,i was the only one that had it and it was yummy so cooking it again for everyone tonight.
    What kind of veggie things do you eat?:)

    I'm not sure it a fantastic receipe just a lazy one :rotfl:

    I normally make my own sauce unless I come across and really cheap deal,

    Couple of jar of toms
    1/2 tube tom puree
    couple pinches dries mixed herbs/garlic/chilli if you like
    simmer all together on hob

    at the same time fry a few onions and then add a bag of quorn , mix tom sauce and quorn and onion all together then layer up with (value of course!) lasagne sheets and top with white sauce, homemade/a jar (aldi is the best and cheapest) or a packet mix, top with grated cheese salt and pepper and bake with foil over the top for 25 mins ish the whip off the foil to brown at the end.

    You can add so many other things to change it, sundried tomatoes, lentils, roast veggies, courgettes, whatever you have that you can get away with trying to hide in there :D

    If its not for veggies you can add beef stock cubes to meat up the quorn a bit for meat lovers.

    I've spent nearly the whole day meal planning and online shopping, a big order from mr t, and really its only store cupboard stuff, no meat,fruit veg etc. and lots of packed lunch stuff which could be done cheaper but I know they won't eat it. Still need to get a few bits form the frozen food shop, and have also done 4x portions of sausage and bean casserole for the freezer, as well as the spag bol from this morning.

    I will give it a serious go this month sticking to it and if it doesn't work I shall never try again as it takes so flippin long to sort out :rotfl:

    As far as I know, there is no meat doodah in beef stock cubes so veggies can freely use.....unless I'm wrong, in which case:eek:

    ... but not all. Depends on the brand. Some beef stock is suitable for vegetarians, some you have to get the veggie-friendly version.

    Hiya newgirly, can I ask what mustard powder you use (if you do use it??) for weezl's bean curry?? I've never bought mustard anything in my life & don't know what to look for :o

    Well done on the meal planning/prepping, I hope it does work out for you because if it does, I'm going to try it!! :D I've already managed to reduce my weekly shopping spends thanks to your diary :T

    Ah thanks pink poppy, I use col*mans tinned mustard powder as I got it cheap from approved foods ages ago, but will stick to it now as I'm the only one who eats it and it lasts forever. However if you don't have it already I wouldn't bother buying just for that as I've made many times without, just add a bit more chilli instead ;)

    After spending the day meal planning yesterday, I've decided to do it a week at a time, so have cancelled my big mr t delivery and will shop once a week for the bits missing I need, it will allow for a bit more variety as well hopefully then if I see good offers or yellow stickers I can swap days more easily to next week.

    Also batched cooked a spinach and chickpea curry last night which was nice and probably very healthy, coconut milk about 99p I think, 2x chickpeas 39p@ , bag frozen spinach £1, 3 big onions and lots of spices. It made 3 portions (quite big ones !) and I had one with wholemeal pitta.

    Surveys done today 10p

    Thanks for the mustard info ~ I might just use more chilli as you suggested, depends if I can find some bargain mustard ;)

    Your spinach & chickpea curry sounds yummy ~ I've been eating mostly veggie on Sl!mming W0rld so will see how SW-friendly coconut milk is as I know I have a tin in the cupboard that I've had for years.

    If you are on sw then I would use a tin of tomatoes instead and divide the coconut milk into an ice cube tray and just use a few frozen cubes as and when as I think it's very high in cals, I have done it that way before and it's fine and not quite as rich if you are having it for a main meal.:D
