Hello all,
Haven't posted on this thread for a few weeks but really need to try and reign in the spending and get organised.
Plan for the coming week is:
Tonight - Chicken Korma & Rice (Jar of sauce, shhh!)
Sunday - Roast Lamb (leftover lamb in the freezer from Easter)
Monday - One Pan Salmon & Roast Asparagus
Tuesday - Spaghetti Bolognese
Wednesday - Steak Fajitas
Thursday - Spaghetti Carbonara
Friday - Pizza & Wedges
Saturday - Fish Pie
Sunday - Lamb Cutlets & Sweet Potato Mash
Lunches are soups (Carrot & Coriander/Potato & Leek), sandwiches and salads.
I see quite a few people are making Fish Pie this week. I put it on my meal plan every week but have yet to make it! I bought 2 packets of whoopsied mixed seafood ages ago, but not really sure what I am doing with it so keep putting it off!
All recipes have seafood listed individually, but I am sure it would be ok just to use the mixed packs, even if it's not as nice, wouldn't it?0 -
I never use seafood in my fish pie!
I use a roux- melt butter and add flour then add milk then add cheese and mix
I then add my oven baked flaked fish
and a tin of sweetcorn
(this was all guesswork the first time using up stuff from my cupboard but worked a treat)
then top with mash and some more cheese and put into the oven until the cheese had melted. it is lovelyFeb GC: £200 Spent: £190.790 -

Thanks wssla, sounds ideal, except that I need to use up the packed seafood!! One of those, "hmm, that's a bargain" moments when it's something I wouldn't normally buy and therefore not really a bargain!
I can do the above but just poach the seafood mix couldn't I? Maybe add some fresh salmon though?0 -

I do more or less the same but add in some frozen peas with the sweetcorn and I poach the fish in some milk, then use the same milk to make the white sauce. Will be using some salmon, plain and smoked haddock (from the freezer) I dont use prawns or other seafood as daughter wont eat it. Should be able to make 6 - 8 portions and freeze 4-6 portions for future meals.0 -

I only use fish in mine as we're not big lovers of anything else that comes out of the sea
I buy the YS fish (salmon, cod, haddock, anything really) & then, when I've got enough, I'll make a pie. Sometimes I'll buy the packs of frozen fillets from Iceland & use these along with a piece of YS salmon for example.
I love Jamie Oliver's fish pie recipe - it's my fave! You don't need to poach or cook the fish & there's no sauce to make either...mmm - can't wait till teatime...0 -
Bit late in posting as have been mega busy the psat few days.
SAT lunch - sandwiches and sos rolls
Tea - fish cakes, mash and mixed veg
Sun Lunch - sweet potato, lentil, bacon and curry paste soup
Tea - roast beef, yorkies, mash and carrots and green beans
Mon lunch - LO soup
Tea - Beef stew and dumplings
Tues Lunch - sandwiches
Tea - Quiche and salad with Jacket pot
Weds lunch- Something lo and lurking in the freezer
Tea - Chicken in white sauce with rice and peas
Thurs lunch - sandwiches
Tea - cheese and potato pie with beans and sausage
Fri lunch - sandwich
Tea - chips and chicken burgers with spaghetti
Snacks will be ginger cake, spotted dog or jam tarts that have already been baked. Breakfasts will be cereal.:j Was married 2nd october 2009 to the most wonderful man possible:j

Try this recipe http://www.waitrose.com/recipes/index.aspx?recipeuid=eb3c6ebc-01ab-4dad-9c1b-d7a196dc2821 although you don't necessarily need to use both cod and haddock, either of them on their own would work well too.
Or depending what's in the seafood mix, you could make a paella?
I'm not entirely certain that this week's plan will work, but the vague idea should be as follows:
Today: Roast chicken, new potatoes and salad, with profiteroles for dessert (guess who did the M&S Dine In deal)
Sunday: Lunch - chilli con carne w/ brown rice
Dinner - L/O roast chicken with salad
Monday: Lunch - spicy chicken with cous cous and roasted vegetables
Dinner - Ham and mixed salad
Tuesday: Lunch - Grilled chicken, pearl barley, lemon, asparagus and pinenut salad
Dinner - Falafel w/ wholemeal pitta and salad
Wednesday: Lunch - same as the night before
Dinner - Steak w/ sweet potato chips
Thursday: Lunch - not sure, possibly baked potato with ham + salad
Dinner - spaghetti bolognese
Friday: Lunch - at the pub, so probably 'something and beer'
Dinner - poss. fish and chips, if not then something equally unhealthy and scrummy
Slightly mince and chicken-heavy, but I have to make room in the freezer (although I appear to be making room for yet more mince and chicken....)Despite the name, I'm actually a laydee!0
