    Hopefully the 'better weather' is on its way so may be able to start incorporating salads into the old mealplan :j but in the meantime:

    Saturday – Bacon bits risotto & garlic bread

    Sunday – Beef dinner with Yorkshire puddings, mashed potatoes, roast potatoes, cabbage, green beans & mashed carrots & parsnips & gravy

    Monday – Quick chicken curry & naan bread

    Tuesday – Beef pie with mashed potatoes & cauliflower cheese

    Wednesday – Omelette (pizza for DS), baked spuds & HM coleslaw

    Thursday – Jamie Oliver’s Fish Pie & brocolli

    Friday – BLT’s

    My first time here, but the belt needs tightening again! Having looked in the freezer/cupboards, I think I can avoid Mr S for the whole week.....

    Saturday: HM Pizza
    Sunday: Cheese & chorizo stuffed chicken, new pots & veggies
    Monday: Spaghetti Bolognaise
    Tuesday: Fajitas
    Wednesday: Chicken stir fry
    Thursday: Soup & ciabatta
    Friday: Turkey drummers, wedges and beans

    Oh thanks Sunnygirl - weetabix loaf it will be this w/e! I love anything with dried fruit in it, and it looks really easy to do.
    As for the quiche, this is very simple also - I do this with any vegetables kicking around in the fridge, in spring and summer when soup and stew appeal a bit less.

    What you do is line a quiche tin with pastry, pizza dough or puff pastry - whatever you want to make or have handy. I even use filo sometimes. You can pre-bake your base blind for up to 10 minutes if you prefer (I never bother).
    Meanwhile, prepare your veg. If I use pumpkin or butternut squash (cut into cubes), it is nice to roast it in the oven till soft - about 25 mins. And while I'm at it, I might also add some sliced red onion to the roasting tray, and/or some mushrooms and whole unpeeled garlic cloves. It is also perfectly possible to boil the pumpkin/squash cubes for 10 mins or so in water.
    I like to use something green with the pumpkin - and as I don't have any broccoli, it will be frozen leaf spinach this time. This will be simply thawed in the microwave.
    OK, so next arrange your pre-cooked or roasted vegetables in the lined base. (If you have roasted garlic cloves, squeeze the pulp out among the veg).
    For the egg-filling-stuff, I use: 2 eggs, beaten with a 200g tub of low-fat boursin type cheese. (That goes really well with the pumpkin and spinach).
    If you have no DH or other family member wanting to lose weight, you could use full-fat boursin, or goat's cheese is delicious too. (not to mention a few dollops of blue cheese). If you use plain soft cheese, add a teaspoon of oregano or herbes de provence.
    Pour the filling into the base over the veggies and bake for 30 mins in a 200° oven, untill the filling is set and turning golden.

    Hi all :wave:

    This week we're going to go for:
    • Mon - Leftover chicken pieces [STRIKE]with something (will report back when I have inspiration)[/STRIKE] Ethiopian Dorowat stew type thing with ginger, nutmeg, cardamom, cinnamon and cloves. Will see how it goes...
    • Tues - Mexican casserole (Thanks Lillibet if you're reading :beer: - got the idea from the More exciting mince recipes thread)
    • Weds - Leftover ^ with rice
    • Thurs - [STRIKE]Diced turkey breast somehow (again, will report back... :o I'm so bad at this 'planning' lark!)[/STRIKE] Turkey is still in the freezer as I had zero inspiration. OH is planning a sausage casserole or toad in the hole. :T
    • Fri - HM puff pastry pizza with salad
    Breakfast will be cereal

    Lunches are going to be boiled ham sandwiches. Got a joint and going to slow cook it (must read some threads for inspiration, but thinking honey and cloves). Went for Nigella's ham in coke recipe. Smells good so far :D

    Got back from a week away yesterday. A lot of restaurant meals. Weight creeping up ... And I want to start a personal challenge of living on just my salary and saving DH's, so this is a more frugal list than usual.

    Sat: sizzled middle-eastern lamb, roasted tomatoes, couscous (vege sausages & beans for children)
    Sun: spaghetti bolognese with lots of vegetables (vegetable pasta sauce for DD)
    Mon: recycled bolognese with added beans and chilli, served with rice and corn chips (corn chips with beans & vege frankfurters for children)
    Tues: haddock loins baked with a breadcrumb topping, broccoli, sweetcorn, potatoes
    Wed: lentil & tomato soup with HM cheese scones or sodabread
    Thurs: HM quiche using leeks, peppers and some ham I found in the freezer, salad or broccoli (make small one without ham for daughter)
    Fri: coconutty chicken curry & rice (vege burgers & chips for children)

    I will also be making packed lunches for holiday club: meat or peanut butter sandwich, yoghurt, piece of fruit, and a treat such as a small bag of chips or hm muffin. My lunches will be hm soup & a sandwich when at home, sandwich and bought soup at work (no heating up facilities).

    Hi everyone,
    this week was an easy one as I was away for 4 nights :)

    The plan for next week is:
    Mo 12th OH cooking something-no idea what
    Tu 13th shepherds pie and peas (HM from freezer)
    We 14thfoil baked fish with fennel, ginger and chilli (from river cottage everyday) roasted spuds
    Th 15th chicken and mushroom in brandy sauce, rice (ready meal from waitrose)
    Fr 16th Baked sweet potato, spring greens and pork chops
    Sa 17th home made pizza
    Su 18th boiled ham, spinach dumplings, mustard sauce and cabbage (from economy gastronomy)
  • Hiya everyone - still working on running the freezers down so here goes

    Sun : Spicy chicken pieces with salad and maple potatoes

    Mon: Lasagne with salad and garlic bread

    Tues : crispy prawns with chinese noodle stir - fry

    Wed ;Bacon and cabbage with parsley sauce

    Thurs:Sausage and mash

    Fri: Fish pie (using haddock, mackerel and prawns)

    Sat: Egg and chips

    Sun: Roast beef etc
    Blessed are the cracked for they are the ones that let in the light

    Oops, am out saturday night so no HM pizza. OH is going to make this comfort food at its best (I hope! I haven't eaten corned beef for about 15 years, and that was sliced from the counter (presume from a giant tin), but I have never had a tin of it-and am really excited :D)
