Monday – spicy vegetable meatballs with pasta (kinda new, had the meatballs as burgers before, but this will be in a sauce)

Tuesday – corned beef crispbake with chips and vegetables – something easy as I’m giving blood for the first time after work, so don’t know how long I’ll be/how I’ll feel afterwards! Had chicken fajitas instead

Wednesday – pea pakora pocket with salad

Thursday – sausage pasta bake with garlic bread

Friday – spiced chicken with rice and crisp red onions

Saturday – sausage casserole with cous cous

Sunday – cod with lemon and parsley crust and summer greens

Part of the Furniture Combo Breaker I've been Money Tipped!
I wasn't very good at sticking to last week's mealplan, as I kept finding I didn't have the ingredients I needed to make what I'd planned. Meal planning only works if I get my shopping sorted out too! :o

This week's plan is far from fixed as what I'm doing keeps changing. At the moment it's:

Friday - probably out, but possibly something from the freezer before going out (I'm meeting my sister but I won't know until tomorrow afternoon what time she'll be arriving)
Saturday - pass. I might eat at lunchtime, I might eat in the evening, I might end up getting something out of the freezer. Who knows? smiley-confused013.gif
    Sunday - as Saturday. smiley-confused013.gif:D

Hopefully things get a bit more organised from here on in:

Monday - chicken, pancetta and bean stew (from this month's delicious magazine)
Tuesday - pesto-coated pork chop with LO bean stew
Wednesday - beef stroganoff, some sort of veg, some sort of carb (possibly pasta, or maybe chips)
Thursday - egg and pea curry with garlic naan

(Actually, it's not that much more organised as I've just changed my mind while typing this post. :o I'll get this sorted at some point...)
Back after a very long break!

No problem! Weetabix Loaf I double the recipe and it makes 2 in 2lb loaf tins. There's no fat in it but it lasts for a week easily. I also vary the dried fruit in it depending on what I have in. It's gorgeous toasted when it's become too dry to just slice & butter :)

Can you share your recipe for Pumpkin & Spinach quiche please? I have a butternut squash that I fancy using in it instead of pumpkin.
