The pork's really simple - all I do is chop the pork (I've got some pork loin) and the mushrooms into bite sized pieces and cook in a splash of oil until golden. Then add a blob of wholegrain mustard and some cream (I've got extra-thick double cream as it was reduced to clear, but any kind will do, although you might need to add a bit of flour to thicken the sauce if your cream's very runny), and simmer gently until everything's cooked through.
The leek mash is simple, too - just soften sliced leeks in some butter until really soft, then stir into mashed potato with some black pepper (and salt if you use it).
Yum yum!Back after a very long break!0 -
Thank you, CCP, I will try it. I add cabbage and spring onions/finely chopped red onion and black pepper to mine.0
