Evening all
After meal planning for a good few months I've fell off the wagon as I've been a bit unwell so need to get back to it as DH has been in charge of feeding everyone and we've have one or three too many takeaways!
I'm just going to put a loose plan up and complete/add to it as I go on - I really just want to make the commitment to get back to it!
Monday - Pork Loin Steaks, Mash, Cabbage, Swede & Gravy DH Steak, Saute Pots & Mushrooms
Tuesday - Roast Chicken Dinner
Wednesday - Fish Pie & Veg (depends whats in box) DH something else (doesn't eat fish)
Thursday - [STRIKE]Toad in the Hole[/STRIKE]Sausages, Roast Potatoes & [STRIKE]Veg[/STRIKE]Beans
Friday - Chicken curry (me & Twins) Chicken Korma (DH) Chicken (DD) (Chicken to be cooked in SC while out)
Saturday - Lunch out (DH, DD & Me) Dinner TBC
Sunday - Roast [STRIKE]Leg of Lamb[/STRIKE]Beef with Trimmings
DS-D, DS-S and DS2 are off school/college now for two weeks and so lunches will be HM soup/Something on Toast/Sandwiches. DS1 has a flask now so he may take soup if its made as his wages run out!
I will be off work for this coming week at least so hopefully can get some baking done if I feel up to it - if not I'll just direct/supervise DH.....he makes a mean Lemon drizzle cake!
I'll update once I've done a firm meal plan tomorrow - will try and do it for the two weeks of the holidays.Climbing back on the OS wagon after a short vacation to Recklessness

This week, is a using up what's on hand week.
Today: Leftover roast lamb, sliced and reheated in leftover gravy, leftover roasted veggies. Freshly made mash potato and some fresh veg also (not lot leftovers).
Tomorrow: HM lasagne from freezer (taken out to thaw this morning)
Wed: Meatballs and oven chips
Thurs: Chick fajitas or Pork Stir fry
Brekkies: Wheetabix (DH, DD), muesli with added dried fruit (me), grapfruit juice (DH and I), apple juice (DD - she hates GF)
Lunches - packed lunchboxes all around (Dh, DD and I).
We are away for the weekend, so it's whatever my mother decides.
I was good at using up veg on hand yesterday - I got a present of a parsnip and turnip on the plots a couple of weeks ago which I hadn't used, but I chopped them up with the last 2 carrots in the fridge and roasted them with the lamb juices and rosemary and garlic, and a good dash of balsamic vinegar added in - yum!!! (we were very late getting back from shops so lamb was ready when we put potatoes and veg into oven, so I just reused lamb tray rather than add to washup).
Hopefully next week I'll have some time to myself to empty freezer fully, and restock it with batched dinners, and some baking. And clear out some older items with a plan to use them up.GC 2010 €6,000/ €5,897

Actually, I know I have a packet of smash-type potato, and I have a few different tins of seafood (tuna, sardines, salmon, clams, possibly crab) - could I make some fish cakes or something with some of those?GC 2010 €6,000/ €5,897

Right, change of plan for me as my organisational skills have gone out of the window over the weekend:
Friday - Indian "fakeout" - chicken curry (bought, but RTC), naan bread ([STRIKE]possibly HM, possibly bought - I haven't decided yet [/STRIKE]- I went for buying as they were on special offer) and onion bhajis (definitely bought, although I keep intending to try making my own)
Saturday - [STRIKE]I'm probably going out, but there's plenty of stuff in the freezer if I change my mind[/STRIKE] I did go out but wasn't really hungry so I just grabbed a snack on my way there (not very OS, I know!
)
Sunday - [STRIKE]prawn satay skewers, naan bread and salad[/STRIKE] Umm.
I was too hungover to cope with raw shellfish so I just had a cheese and ham sandwich.
:o
Monday - [STRIKE]BBQ chicken lasagne[/STRIKE] Forgot to defrost and roast the chicken yesterday, so I'll have pasta al lago instead. (My name for a dish I used to eat in the canteen at a previous workplace - they called it carbonara but no Italian would recognise it! It's very nice, though, which is why I still make it.)
Tuesday - Portuguese braised steak and onions, mash and [STRIKE]a green veg of some sort[/STRIKE] carrots, as there was nothing green in my veg box this week.
Wednesday - [STRIKE]LO gardener's pie (in the freezer from a couple of weeks ago) with sliced ham[/STRIKE] BBQ chicken lasagne, assuming I've managed to get my act together and cook the chicken by now!
Thursday - ham and mushroom pizza
Must do better next week!
Edited to add: Winged one - I've never made fish cakes with instant mash but I can't see why it wouldn't work. I'd make the mash quite thick, add your fish and some seasoning (some lemon and / or herbs might be nice, too), then shape into cakes and shallow fry. You could cover them in breadcrumbs before frying, too, if you fancied it.
HTH.
Back after a very long break!0 -
Thanks CCP - will experiment next week when I have a few hours to myself!!GC 2010 €6,000/ €5,897
