    Right, so having done the back of the envelope calculations for June/July (I get paid on 23rd, so still a fair chunk of June left)......we will have £100 for the month for groceries, all in.....

    So, it will be very tight, and if the car doesn't pass its MOT, then it will cause a bit of a problem, but at least I have £100 for groceries, and not a minus figure, so I have something to work with.

    Absolutely no scope for manoevre, though, so must must must keep a very close eye on things.

    Well, I do still have a reasonable amount of basic stuff in the cupboards, eg rice, pasta, couscous, and several sorts of meat in the freezer, eg mince, chicken thighs, diced beef.....so I have been able to make a good meal plan for the next couple of weeks based on those. I always have spices in stock, so with the addition of a fat free natural yoghurt can whip up a decent coating for chicken, or for stir frying some left over veggies with rice etc.

    It will be largely fresh fruit and veg, bread and milk that will be needed this month - I will try and live on the cupboards/freezer until the end of July, when we shall be away on holiday, so the challenge should fit in well as it actually has an "end date"!!

    Today was pasta carbonara type thing - lardons £1, an onion, pasta, and a sauce made from low fat creme freche, with some dijon mustard stirred in, garlic, and black pepper.

    Was yum!

    Tomorrow will be roast chicken legs, coated with the remainder of the mustard/creme freche, cous cous, and roated vegetables.

    Wednesday is enchiladas.....have the wraps etc in the cupboard, and mince in the freezer, and can make some spicy rice to go with it....

    Thursday is DD's prom, so DS and I will have spinach and ricotta pasta with sausages.

    Friday, Pania is coming over, and I have an abundance of aubergines, and some quorn mince that I have no idea why I bought but it is in the freezer anyway, so it will be veggie moussaka.

    And so on!
