How about a vegetable dish using brown rice. The rice doesn't have to be the main part, you could have a vegetable dish with rice as opposed to a rice dish with vegetables if that makes sense.
If you're buying the veg in bulk then it often works out a lot cheaper and the same goes with the rice. The good thing is you just add whatever vegetables you have or what needs using up like peppers, onions, mushrooms, tomatoes, courgettes as they go nicely with rice. Add some salt, pepper and whatever herbs you like. Can get fresh basil from Lidl at 29p at the mo if there is one nearby.
This sort of things actually seems to taste nicer the day after it has been made for some reason, could also make it in bulk and freeze it.
Various curries you could have.How about spinach and potato curry with brown rice, the rice is optional as you can just have it without. Lentil curry, egg and potato curry.
I could go on and on about food, am no good at cooking it, but am excellent at eating it when others have made it.0 -
Can you eat couscous? That would go well with most cooked veggies as mentioned above by ti1980. Try adding chickpeas and lightly toasted almond flakes or pinenuts into the steamed couscous and remember to give the couscous a generous dollop of butter/margarine or olive oil to dress it.
I like chickpeas generally. How about a spinach salad with chickpeas, sliced red peppers, baby spinach and sliced mushrooms? Throw in your favourite fresh, soft herbs (parsley, basil, coriander) and add some french dressing? If you like cheese, top it all with grated parmesan or gruyere or cheddar.
Gary Rhodes did some nice things with bought puff pastry - can you eat that? He pricked all over a square of the stuff with a fork, brushed plenty of melted butter acorss it and topped with cooked veggies like spinach, mushrooms, peppers, roasted tomatoes etc. Top with cheese if you like and bake or grill it. It's kindda like pizza but far less heavy because of the puff pastry. This one should reheat well, or can be eaten cold like a quiche. Think I also saw a combo done by Rick Stein that used cherry tomatoes and rocket leaves with some goats cheese.0 -
I started doing this as I'm saving up for travelling.
Started having soup at work and fruit inbetween, its working well.
I have toast now and again, noddles, pasta etc basically anything you can heat up in the microwave!0 -
I've got some HM ratatouille and will cook a jacket potato in the microwave.
I know you can't eat potatoes, but you could do a similar thing with wholemeal pasta/rice? I find heating the 'elements' up separately and then putting them on a proper plate seems more appetizing than heating a bowl up in one go.
Make a veggie sauce (like ratatouille) and put portions into jam jars. Do the same with pasta/rice etc. Heat the jam jars up in the microwave (lid off!!) and then serve on a plate. Seems much fresher that way.New year, no debt! Debt free date - 02/01/07 :j :j :j0 -
Hows about pasta? You could add veggies or quorn/soya etc, or what about Mac & Cheese? SpagBol with veggie mince? Pasta or Rice salad. HM coleslaw and smallish jacket potatoe? Veg curry and brown rice with bombay spuds-you could have this in a tortilla cold or with tacos.

I completely understand how hard it is. I'm vegan and have a gluten problem so packed lunches are really the only way to go but sandwiches are a complete no no. Here are some suggestions: I often have HM veggie soup, HM hoummous with very little oil (lovely eaten just with a spoon or crudities), brown rice salad with pulses, wheat free crackers(for when your desperate for something 'normal' - wheat free crackers are not as disgusting as wheat free bread but can be expensive) with peanut (or other nut) butter. Avocado mashed with some chilli powder or banana mashed with sultanas make a nice spoonable treat. A pile of roasted veggies (hot or cold) is also a great 'comfort' one for when you can't face the usual 'cold' salad.
I'm sure like me there will be times when it gets you down but keep on track because the health benefits outweigh the annoyances in the long run.
