I like making pasties with leftovers. It's a bit of a sunday afternoon project, but it's only time-consuming, not expensive or difficult, and they keep well for the week in the fridge or freezer.
Maybe this is an acquired taste (and very lazy) but I enjoy making a salad to go with lunch by filling the bottom of the tub with cold pasta, couscous, quinoa, rice, etc. and putting a salad on top. Then I have the dressing in a separate tub, pour over the main tub and it dresses both at once. It sounds vaguely unappetising written down but I swear it's nice and it's a good way to eat something varied without carrying an entire lakeland catalogue's contents around with you.
Vegetarian sushi is another nice thing once in a while, alongside a normal (smaller) sandwich for me usually. It doesn't take a huge amount of time and the fillings are stuff you can prepare in bulk for other sandwiches/wraps in the week0 -
I would second quiche, just made some for next week's lunches. Lovely with some salad.
Also could have things like cheesey scones, veg sticks/breadsticks and dip (hummus, salsa, cream cheese), cold pasta with tomatoey sauce and cheese/ham/tuna, crackers with a few slices of cheese and some onion, or crackers and pate/cream cheese, homemade veg pasties or sausage rolls.
Homemade soup works out very cheap, do you have a flask you could store it in?
Trying to live a good life on little money :T0 -
If i made sweet and sour prawns with noodles on a Sunday, how long would it keep in the fridge do you think? Could i get away with it until Thursday?0

I cant stand quiche, sorry, there is just something about the texture!
I do have a fask yes, i will have to search for it a bit as i have no clue where it is. As its soup, do i need a food flask, or will a normal flask designed for coffee be ok do you think?0 -
If you have a thermos, soup is cheap to make and a great winter warmer at lunch time. I usually make a batch and freeze it in portions.
The options are endless, but I find mixed veg or carrot and corriander the quickest and cheapest options.

Hi all.
I am wondering if someone can give me some ideas for packed lunches that i can take into Uni during the week.
There is no access to microwave/kettle etc.
I dont mind sandwiches, but they get a bit boring after a while, so either something different would be nice, or some unusual sandwich fillers.
thanks.
Get yeself one of these Cleggie!

I bought one as the last place I worked had Microwaves that were so dirty & unhygenic, gawd knows what you'd catch! The neck is wide enough to take a tablespoon & it hold the temperature very well.I used to take Curry in it with a Naan bread instead of rice,Chili which I'd eat with a pack of Doritos, stew, soup, sausage & bean casserole, ect, just heat in the microwave at home & pop into the flask.0 -
Oh wow spike, i am salivating just at the sound of that chili with doritos!0

Hello lovely people,
as some of you already know I have myself and my OH have just moved back in with my mum and dad. So currently there is 5 adults (my brother is 16 included him in here) and 1 child aswell as the 2 dogs.....cozy doesn't really cut it any more!!
So making lunches for everyone is proving to cause me a massive headache! The three blokes (OH, brother and dad) have apatites like horses, so trying to come up with things they can take for lunch and yet not break the bank is stressing me out. They all eat anything! I mean anything they really don't care. But they are getting sick of the bog standard sandwiches and tbh so am I....they take forever to make since they take 4 each!
If any of you lovely people have any ideas what I can make I would be over the moon! I really enjoy being in the kitchen so thats not a problem.
Thank you all so much in advance!!!

xI have enough money to last me the rest of my life......until I go and buy something!
