I've just cooked up some chicken that was almost out of date, reckon it'll keep for another few days cooked, so theres lunch for the next 2 days. Otherwise, salad and some form of cold meat or tinned fish is fairly standard for me.
Last winter went for tinned soup to heat in the microwave (may try making my own this year).0 -
Hi, I love all the ideas here, but ever since I did a basic food hygiene course a couple of years ago, I have been throwing out any leftover rice/pasta because of the dire warnings over some horrible bug that could grow in them if kept chilled!!
How do you chill and store rice/pasta safely?0 -
last night's dinner - in a reusable plastic box - cost nil
rice, fish 'n' peas
usually when make pasta/rice dishes, put in old plastic ice-cream boxes and store in freezer...
never had food poisioning as re-heat till piping hot (an this can be two weeks or longer after being cooked).
the freezer is my saviour!What goes around - comes around

Peanut butter and banana in a lakeland toasty bag muhhhhm!!!! especially with seedy bread or chuck some seeds in the butty. Yum yum yum. ( how many million calories in PB by the way? )0

I often make a salad, with beans, makes it really filling (unlike green salads), cheap and really really healthy.
In a Tupperware tub put:
A few lettuce leaves (Round Lettuce 42p)
Half tin of Cannellini Beans (3 tins for £1 in Sainsburys)
Half tin of Tuna
1 stick celery (chopped)
1 Tomato (Chopped)
Juice of Half a Lemon
Really cheap, Very healthy and made in about 2 minutes the night before. Works great with anything else you can think of, chicken, salmon etc etc:money:0 -
My favourite packed lunch isn't expensive, is very filling and can be made the night before. Take a lidded food container and grate carrot into it, add a couple of dollops of mayonnaise on top, a small tin of tuna mushed up on top of that, then chop up a tomato or two, add slivers of pepper and finish of with stuffed green olives. Delicious. Carrots, tomatoes and mayo are cheap at Aldi. Tuna at best supermarket price you can find and a big jar of stuffed olives at the everything-for-99p shop will last you a couple of weeks.0

Wanted to add to the peanut butter discussion - try lemon curd and peanut butter. Delicious. Use the Duchy Organics one if possible (not the cheapest) but I think the best.
For other sandwich filling suggestions - make egg salad - hardboiled eggs, chopped celery and onion, plus mayonnaise, salt and pepper. Mix together and use to fill rolls, pita bread, whatever. For a substitution, use tuna instead of the eggs. This way you are getting two bits of veg with your protein.0 -
I used to take a can of cold baked beans to work, actually not as disgusting as it sounds. Try a spoonfull before heating before you commit yourself and end up hungry all afternoon if you can't manage them.0
