3 months is the best time to leave it for, you can eat after 6 weeks but the flavours won't have developed as well.Blessed are the cracked for they are the ones that let in the light

How long is a piece of string springs to mind. Some are lovely straight away but most mature/improve with age.Opinion on everything, knowledge of nothing.0

Hi,
I've just made some homemade chutney for Christmas gifts (tastes delicious!) & had enough to fill 2 large jars & 1 small jar.
All the jars were sterilised beforehand (Milton) & dried in the oven. I made greaseproof paper discs for the inside of the lids (as I could still smell lemon & mint a bit). I filled the jars whilst still hot, then turned them upside down for 10-15 minutes. The seals on the 2 larger jars popped back in, but the smaller one hasn't (I can still pop it). Will it still be okay? Will it pop in once it's cooled? Does it matter if it doesn't?

Was it filled all the way to the top? It sounds like it should be fine tbh, I'm sure it will be yummy and the recipient will be very impressed

Hi. Yes, it was filled all the way to the top. I was hoping there would be enough to keep some for myself, but at least I got to taste it0 -
It will be fine, chutney keeps for years, however you seal it. I probably have some 5 or 6 years old in my larder, and speak from many years experience of HM preserves, including supplying WI markets some years ago.0

sometimes the vacuum isn't created until it cools - a few times I've wondered if the seal would pop back in but when I've looked at it the next morning, it's always fine. - You can tell I make mine late at night0

Thanks all. Will prob end up making some more anyway, as I'd like a jar for myself
One more question.... once you've opened the chutney to use, do you have to store it in the fridge & eat within so many weeks, or can it go back in a dark cupboard & be kept for years?

Once I open my HM chutney I kep it in the fridge but once opened it does not seem to last long with my OH aroundI am playing all of the right notes just not necessarily in the right order
