Miss Behaving chutney matures with age and the vinegar taste mellows, just be sure the chutney is cooked down so the fruit or veg is well cooked and the liquid has reduced down.The chutney shoulld have a thick, soft consistencey.

Hello people,
I'm in the middle of making blackberry chutney but I didn't read the recipe properly.
Will it matter if I use white not red onions?
I don't have the required red wine vinegar - can I use normal distilled vinegar and add a slug of red wine do you think?
Also, is it ok to use coffee jars for chutney? I.e. a plastic lid?
Sorry for rhe abrupt questions, this will teach me to read the reipe before I put half the ingredients in a pan!

I find chutney pretty forgiving so go for it - and I do put some in plastic lidded jars, although you can't get a very good seal so I store these in the fridge to be doubly safe - I find a circle of greaseproof on the top before I screw on the lid is fine.

There is so much acid in chutney that it pretty darn difficult to grow anything in them - just make sure your jars are clean, clean ,clean.
Should be lovely for Christmas - have fun

Yeah, go for it! Make sure you make a noteof what you did different so that in the event that it is deeeeelicious, you can replicate it
Nothing worse than ace-ing a made-up recipe andnot being able to remember what you did to make it!!!!
Once the chutney's cool, put some cling film over the jar and then put the lid on - this will make the coffee jar airtight for you0 -

Hi,
when making chutney, do you put the lids on the jars while it's still warm or let it cool down first?
I've been told to make sure the jars are warm if that makes any difference.

I always put lids on as soon as possible, I think and could be wrong, that the heat keeps "bugs" out, so that it is a "cleaner" environment. HTH0
