ok my old pre war book says cook all ingredients together until result is palatable with no flavour too strong, so i'd assume equal sugar and vinegar?
BUT book says noooo!
most of them are a ratio of 1 veg/fruit/both: 1/4 sugar : 1/3 ish vinegar; so for 8lbs veg it's 2lbs sugar and 2.5-3pts vinegar.
remember, a chutney's flavour improves as it keeps, so don't eat it straight away.
sorry this took me a few mins, it's been a while since I made any chutney so needed to check lol!

remember, flavours mellow too so even though after your 45mins or so of simmering and stirring, it will probably taste pretty rank, very vinegary yet sort of sweet and with strong spice flavours. don't let this panic you. after 3 months, so long as the ratio is done right, it'll be lovely no matter what you put in.
oh, and using whole spices works REALLY well. if you're worried about crunching your teeth on a cumin seed or whatnot, put them in a muslin bag and fish out before jarring.
corguettes tend to go a bit mushy, but that's good in a chutney, they add to a nice sauce. I hope it all works for you!0 -

ooooh I'm excited now - I have the following simmering away onthe stove;
4 lbs courgette (included in this is 1 apple & 1 onion)
1 lb brown sugar
1 & 1/2pts vinegar
3 tsp dried chilli flakes
I can't wait until Christmas to try it out

jellybean, you inspired me today! yours sounds lovely. we're going on holiday on sat and had a load of stuff in the fridge and cupboard and garden needing eating, so I chutneyed today too!
raisins
dried cranberries
dried peaches
celery
carrot (local)
blackberries (local park)
rhubarb (garden, grows like a weed this time of year!)
onion
half a jar last year's sliced pickled onions (they've gone too soft for me 'cos I used a hot method, wont be doing that again)
two jars home made marmalade (I hate marmalade but i had loads of organic satsumas two years ago, so marmaladed them! have given away as many jars of that as I can!)
apples (local)
ginger
lemon peel
green "french" beans (garden)
peas (garden)
bayleaves (mum's garden)
cumin, mustard, corriandar seeds all whole
black pepper
juniper berries (I buy a jar once every few years for adding to stews, boiling xmas ham etc)
brown sugar
a little honey (cleaning out extra jars)
1 single, EVIL little home grown chilli which was fished out befor ejarring along with the bay
and finally, vinegar.
it tasted good before it went in the jars so I think it will mature well! it's a beautiful jewelled red colour and I have 15 jars of it! that's my whole year's saved jar collection lol!!0 -
