We call this 'economical' marmalade as it's impossible to spread it too thickly so it goes further.

Okay-well if I choose to leave it as is can you think of a name that will sound good but prepare people for my lovely soggy jelly.
I like to print off nice labels if I give them as gifts. Not sure, "runny soggy Seville marmalade!' will do.0 -

I was in a store today and I saw Traffic Jam.
It was a layer of green gooseberry jam topped with a layer of marmalade and then topped of in red with raspberry jam! }pretty cool I thought.Norn Iron Club member 4730 -

When i did this with my jam and marmalade the labels read "Extra special soft set marmalade"
I much prefer it now and wouldn`t want to go back to a hard jelly like one.
It does go much further which is an added bonus

I made a batch of my favourite Mamade marmalade, but tried an experiment to see if I could reduce the sugar a bit. Think took a bit too much out, so guess what, it hasnt set properly and I am concerned it might reduce the shelf life!
So what are your best recipies for cooking with marmalade?
I have googled and found marmalade cake, it only uses 2 tablespoons though so would need to eat a lot of cake!

In terms of keeping, no reason you can't keep it in the fridge, or even freezer if you are concerned. Alternatively you can reheat, add sugar and reboil to get a firmer set. Nigella has a cake that uses half a jar - this is an easy on to make and my family love it. There are plenty of online recipes for marmalde icecream.0

I would do as ubamother says and add some more sugar and a little lemon juice and reboil.

Really helpful link thanks.
I will be quite happy keeping it in the fridge as useable as long as spooned onto the toast, but oike the idea of cooking with it too the use up quicker. Marmalade ice cream sounds unusal!
