What can i do with unset marmalade?

I'll do the lemons and boil it into submission:D
I did have the feeling there was too much water as well. When I was putting it in the jars it sounded very watery!
I might keep a couple of jars for ice cream sauce and I've just found a Delia recipe for duck with seville orange marmalade so I am sure it will do for that:D
Last year one of my batches was a bit sloppy but still spread well enough. This batch does not stand a chance of that in its current state:rotfl:
I'm hoping by the time I sort this one out then make another lot tonight I will have enough marmalade to see me through the next couple of years:j0 -
You said that they were last season's oranges - if they had been frozen then their natural pectin would be reduced.
Adding lemons should sort that.
I always use double sugar to fruit for Seville marmalade, so I would add another 300g of sugar as well.0 -
You can use un-set (loose) marmalade/jam as an ingredient in cakes and scones, it is really nice! Also as a sauce for pancakes, with a splash of double cream.Finally I'm an OAP and can travel free (in London at least!).0

I just thought you would like to know I am sitting here eating my home made bread with lashings (yes, really!) of beautifully set home made marmalade:j
Thanks everyone for your advice - I added the lemon juice and 'boiled it into submission', love that! There are a few less jars of it than when I jarred it last night but that just confirms that it did have too much water in as well. I'm off to see if I can find the recipe that worked well for me last year:D0 -

You don't have to buy fresh lemons. You can use to "jif" type bottled juice.
So keep it in your store cupboard, just in case.0 -
