I've mixed up the flours with the paul merritt recipe too and it still works. Sometimes I throw in a couple of ounces of rye flour or some rye and some wholemeal or some seeds. With the rye it does make a much denser loaf though.
I also left it to rise in the window for about 8 hours yesterday as I unexpectedly had to go out - bread was perfectly okay. If Shirley is pushed for time maybe she could do the dough before she leaves for work and then shape and bake when she comes home as that would save her the hours rising time?

And about the coming together...it can sometimes take a good few minutes of kneading for that to happen, so just persevere...dough with too much water doesn't rise properly so try not to add more unless you've been kneading for absolutely ages and it's still too crumbly. I've never had to add more water than what's called for in that recipe, though.
I think that's where I went wrong AlessI panicked a bit I think!

Eggless and lardy carrot cake isn't really very good unfortunately. It hasn't risen very much at all and is still quite liquid inside. The lard doesn't taste of anything really which I guess is good.
May I suggest an alternative to the cake, seeing as I don't think I am the only person struggling to get it to work without the egg? Could I try a kind of flapjack instead, it would be okay for it to be thinner and less firm then? Could still have the carrot and raisin in but use the ready brek?
I will have a go at the carrot cake with the egg again, that was really nice last time!
Bread sticks are in the oven, they are about the same size as cheese straws at the moment. As I have made the bean paste I haven't put anything on them other than the salted water aless suggested (had no idea how much salt tho!)
Ah well, we live and learn eh, and if need be I'll go buy some pizza bases later, lol (not really, they can all starve...)God is good, all the time

. I've also made the PM bread with 50/50 wholemeal/white flours and with only white and it's been fine both ways. Never tried with 100% wholemeal but Shirley wouldn't be using that on this plan anyways

Lol, I like that it amuses them. Funny how a day standing in the kitchen making things is strangely relaxing though, don't mind if stuff doesn't always work that well. I feel sorry for poor housie "Sarah, try this", "Hmmm... well, it's ummm... it would be nice with ice cream and orange coulis..." "Umm, yeah, thanks, not sure that would fit into the plan, but thanks..."
The breadsticks are ace. With 400g of flour and the B and S recipe I let it rise once, rolled it and cut it out and baked it for about 15 mins, turning upside down half way. I have about 30 breadsticks and with the dip is really nice. We have decided that we need to force everyone else to have the dip on their way in the door, it is VERY garlicky!
So, second carrot cake batch will go in and then am going to make my dough. At some point before friends arrive I need to actually get out of my tomato, flour and orange stained clothesGod is good, all the time
