    Hence, you need oil, whatever garlic, onion and parsley you can get your hands on (minuscule quantities are fine, but as the folk that created the recipe would have grown it all in their garden, the more the better), chop it all up really small, and gently saute in the oil.

    Next, add two tbsp of flour, and a dash of salt and pepper (don't go mad, you can always add more later !), stir manically, and when it all gets nice and yellow, add two tbsp tomatp puree, stir a bit further, add a tbsp of vinegar, followed by enough water to get the required consistency of sauce. I find that this is very much a matter of taste - my mother's would resemble a soup, mine is more like a thick gravy.

    Traditionally eaten with polenta, but I grew to hate the stuff, so I'd have it with pasta or gnocchi (or pasta dumplings rescued from a messed-up batch of pasta !)

    Oh, and while I'm at it, carrot greens - like chez Weezl, thinnings go into a salad, but the big bushy tops off a fully grown carrot go into a vegetable stock with any other trimmings and peelings - make for a beautiful, deeply flavoured stock that needs very little added to make a gorgeous veggie soup :)

    It sounds really nice allegra! Is it kinda like a rich sweet and sourish tomatoey onion gravy? Perhaps I should just whip up a batch and see! So the only solid lumps in it are the onion? xxx

    To make up for my intrusion I will try and frugalise my Carbonara for the boys. They easily eat double portions so it wont go to waste.

    Allegra - Your Italian is fine though some Italians would probably reverse the words so it would be Brodetto Povero but it's your dish so name it!

    My grandmother was Austrian before Italy took over her region - Trentino Alto Adige - at the end of WW1 so I get where you're coming from! Even today my relations there refer to tourists as Italians and the style of cooking is more Austrian/Hungarian than Italian.
