Eggless carrot cake with raw omega 3, experiment #1
- 120g sugar (9p)
- 160g grated carrots (1 Large) (13p)
- 100g raisins (13p)
- grated zest and juice of 1 large orange (11.3p)
- 175g self-raising flour (5p)
- 35g plus pints milk powder
- 3 tsp garam masala if you have it in, or mixed spice or half cinnamon half nutmeg if you don’t (2p)
- 70ml veg oil (6.5p)
- 75g powdered milk 37.73p (including the 35g earlier)
- 65g sugar
- some of the orange juice and zesty bits reserved
- enough water to let it down to a thick custardy consistency

Can we just come back to the cakes issue, to clarify things.
The 3 snacks are there for the people who were worried about teenage snacking and the meals not seeming large enough without something in between. Bob and DS1 will need to eat them to get all their calories, Shirley and DD1 may/may not depending on whether they need to lose/gain weight, how tall and active they are.
The portion sizes are not huge, and nor are the calories they contain.
Example, carrot cake original 298 cals. A ceridwen portion of the carrot cake is 596 cals, but this is fine, because ceridwen was having the cake as a treat with her mum and dad rather than a 3 times a day to stock up a growing teen kind of way.
If Bob and Shirley are not snackers, they can just have a larger piece as pudding after a special meal on a sunday :beer::T
I hope that helps understand how I see the role of cakes and cereal bars within the meal planners

weezl, spooky you just posted this. I was just making some improvised "buttercream" frosting and didn't have enough butter, so I used 1/2 veg oil and was going to suggest you could make a sort of frosting/icing with veg oil. Lo and behold, you just posted the same!
(p.s. the PT say hello but are feeling sad you haven't stopped by in a while. also, in the midst of the PM problems, did you get mine?)
I see your point about cakes & such - also with something like the carrot, they are getting the added nutrition from the carrot and raisins. It doesn't totally offset the white sugarness, but helps I suppose. Hopefully the protein in the milk should help it be more "filling" than your average sugary snack. I was dubious at first, but upon closer examination they're about as "balanced" as you can be with baked goods...(unless you go the more expensive wholemeal flour & sugar subs)top 2013 wins: iPad, £50 dental care, £50 sportswear, £50 Nectar GC, £300 B&Q GC; jewellery, Bumbo, 12xPringles, 2xDiesel EDT, £25 Morrisons, £50 Loch Fyne

I think a few people are concerned about the sugar in this subsistence plan.
I'd like to understand that a bit more, if people feel able to explain further.
My thinking so far has been that we have already gone quite low sugar, and will lose far too many calories for Bob and DS1 particularly if we go still lower.
The meal planner will involve 2kgs of sugar over the whole month, but the wartime rationing equivalent of Bob and shirley's family would have 3.5 kgs.
People still lost weight if they were overweight on these rations.

Apple Curd Feedback
Made the Apple Curd last night. Followed the recipe exactly so I could test it fairly. Thought the amount of spice was a lot and might taste too strong, but the finished curd was just right.
It made a jam jar full to the top. Tasted it warm as I was putting it in and it was yummy, lovely smooth mouth feel too. Could have spooned the whole lot up, straight out of the jar, right there and then
Had some on a piece of toast this morning for breakfast, no spread. It was delicious. But was still hungry afterwards, maybe I should have had 2 slices. I tend not to have toast very often as it adds up to more calories than I want to have in the morning, although that is with butter on it as well as jam or whatever. I'll work out the calories of 2 slices with the curd and see what that is
Have done the survey, and have checked the surveys for the other recipes I have done, very useful that it knows if I have done it or not as I had completely lost track of which surveys I had done and which I hadn't
The survey asked what else we could do with it. We could have it on scones, in a tart for pud, in a tart underneath something else (like sliced apples or a crumble like top), it would probably work well with pork, we could make it with pears or other hard fruit. It seems quite versatile to me.
Shirley could make scones to keep in the freezer for snacks. They don't have much fat or sugar in, so maybe better than cake

Isn't that interesting. With the cakes etc each day, it feels like quite a lot of sugar, but 1 bag between 4 people is not much at all, only 500g each or not much more than a tblsp a day, which seems a very small amount!0
