  • Hi All and thanks for starting the thread....

    2 meal mis-haps last week, but haven't wasted anything so all good there!

    This week:

    Thurs: Ate out - free bottle of wine at Hungry Horse
    Fri: Gammon and Pineapple (last nights tea!)
    Sat: Fish Stew - haven't made it yet - was tired last week and OH got fish & chips instead mmmm
    Sun: Eat at OH's parents
    Mon: Pork Chops with Parmesan Crust
    Tues: Might eat out as got 50% pizza hut voucher and some free cinema tickets we had as a present or might do Tuna Steaks and Prawn Skewers as planned - don't know yet.
    Wed: Roast Chicken with all the trimmings

    CCP: The Sausage, Root Veg and Barley casserole sounds very nice. Please could you share how you make it?

    Princessl84: Please could you share your Turkish shepherd salad recipe? Sounds intriguing :)

    Girls have tea, me and Dh have supper. Fruit for puds if any. Fruit (usually bananas and dried fruit - inc at least 4 dried figs a day! :D ), carrots or pecans for snacks.

    SAT
    B: Cereal or porridge with fruit
    L: Veg burgers in sesame buns with gherkins and salad
    T: Tomato soup. White custard and pear pot.
    S: Dahl, veg and potato bhaji, salad and poppadoms

    SUN
    B: Cereal or porridge with fruit
    L: Out for family birthday - taking a HM "celebration" mushroom pie to slice for the veggies/vegans
    T: Quinoa with mixed veg
    S: Pizza, popcorn, carrots, olives and crisps

    MON
    B: Apricot, almond and lemon muffins
    L: Bubble and squeak if any party LOs, otherwise will make an extra pizza on Sun night
    T: Mixed bean pate in pittas with salad
    S: Mediteranean beans with salad and piadine

    TUE
    B: Cereal or porridge with fruit
    L: Avocado on toast (PB salad sarnies for DH). White custard and pear pots for girls.
    T&S: Green lentil and mixed veg lasagne with garlic bread

    WED
    B: Apricot, almond and lemon muffins
    L: Lasagne from Tue
    T&S: Minestrone soup with fresh bread or more piadine depending on how busy I am

    THU
    B: Cereal or porridge with fruit
    L: Mixed bean pate on toast (in sarnies for DH). White custard and pear pot for girls.
    T&S: Ratatouille with barley

    FRI
    B: Apricot, almond and lemon muffins
    L: Ratatouille on toast (ratatouille and barley for DH)
    T: Dill-coated tofu, peas and chips
    S: Battered dill-coated tofu, peas and chips

    3 small Green Peppers (Italian pepper)
    2 Green Onions
    1 medium onion
    A handful flat-leaf Italian Parsley, finely chopped
    A handful fresh mint


    Dressing

    1 Lemon Juice
    1/4 cup Olive oil
    Salt

    Or a yoghurt dressing

    If i am making it as a main or lunch i also add cheese & chicken

    I'm not entirely sure myself, yet - it's a recipe I used to make with a ready-made sweet mustard sauce, but I've run out and I'm not sure where (or if) I'll be able to get more, so I might have to work out a substitute.

    It's basically: brown some sausages on all sides, then remove from the pan and chop into bite-sized pieces. In the same pan, brown some chopped root veg (on this occasion carrot, parsnip, onion and potato, but I've used celeriac before and that was good too), then add back the chopped sausages and add stock, seasoning, a good dollop of the sweet mustard sauce, and a handful of barley, and leave to cook either on the stove with a lid on or in the oven until everything's tender.

    If I can't get the sweet mustard sauce (and I've been looking for the past three weeks and haven't found it yet), then I might try a blob of wholegrain mustard instead - it won't be the same, but it should be nice, at least.

    Oh, and thanks very much for mentioning your apricot, almond and lemon muffins: I've never tried that combination of flavours before and it sounds yum. I might have to do some baking over the weekend!

    CCP - Perhaps a pinch of brown sugar with the mustard might help? If I don't have any veggies sausages around, I might well use a mixture of beans - butter beans and kidney beans would probably make a nice mouthful with those flavours. What do you think?

    I think you're right about the beans being good instead of sausages - particularly butter beans, I would think, as they absorb other flavours so well.

    And thanks for the suggestion of adding a pinch of sugar - a) because I think that will help the flavour, and b) because it reminded me that I need to add sugar to my shopping list!:beer:

    I know I'm not Boodle, but I can tell you dried figs are lovely. They're much sweeter than fresh ones, and rather chewy - something like fruit toffee with pips in. My mum always used to get a box in for Christmas when I was a kid, so they always taste like Christmas to me now!
