    Did you get the idea from the Great British Bake-off? I'm tempted to make one myself, but I'd have to use a roll-out fondant icing as I can't stand marzipan.

    Ha, ha! Yes:) It wasn't coffee-vanila though, I went for classic one. Roll-out should be fine.

    I'm going to sound really dim here, but what is wheaten bread? Surely most bread is made of wheat?

    I will be making 3 dozen muffins today or tomorrow (or both) to take to work on Wednesday as a treat for the students. I'm planning on a carrot/apple/raisin/walnut type and a pumpkin streusel one. have not tried either recipe before-- I hope they turn out well!

    It’s a form of soda bread often referred to as brown soda bread. Soda bread can be made to ways either by wholemeal or white flour.

    In the part of Ireland where I live the wholemeal variety is normally referred to as ‘wheaten bread.’ Local flour manufacturers mill what is referred to as a wheaten bread mix. The mix contains: wheat flour and wheat bran plus raising agents. The two major companies supplying the mix are: Nortons, and O’Neills.

    With the mix it is a very easy recipe to make.
    500g of the wheaten bread mix.
    About 320 mls buttermilk, though some people use ordinary milk

    I don’t bother with sugar but again some will add a teaspoon.

    It is simplicity itself to make. Sift the bread mix into a large bowl and add the buttermilk. The secret of good wheaten bread is to mix quickly and lightly, you don’t knead as you would a normal bread.
    Sprinkle your work surface with some flour and roll out the dough into a round about 1 inch thick. Cut a large cross on the top of the bread this helps it to expand.

    Pop into an oven pre-heated to 200c and bake for 30-35 minutes.

    If you can’t lay your hands on a mix then here is a recipe you could try.
    · 400g stone-ground wholemeal flour
    · 75g plain white flour
    · 1 teaspoon of salt
    · 1 level teaspoon bicarbonate of soda (aka bread soda or baking soda)
    · 1 egg
    · 1 tablespoon of sunflower or olive oil or 2 oz butter or hard margarine
    · 1 teaspoon of honey or sugar if desired.
    · 425ml of butter milk

    Sift the dry ingredients – wholemeal flour, plain flour, bicarbonate of soda and salt – into a large mixing bowl. Mix together.
    Mix your buttermilk, egg, honey and oil in another bowl until well blended.

    Make a well in your dry ingredients and add about 320mls of the milk mixture and mix with your hands. Don’t worry if it seems sticky it is supposed to be that way.

    When you can work it sprinkle a little flour on your work table and shape the mixture into a round roughly 1 inch thick adding a cross to the top of the bread will help it rise.

    Hope this helps. Because I can easily purchase the mix I would never really use this method, so experiment, it really is beautiful bread, but no guarantees :D

    Uniform Washer
    Im emptying my cupboards in an effort to move house - so today on my day off I have baked the following:
    - pancakes,
    - fruit scones,
    - choc chip fairy cakes and
    - homemade sausage rolls

    ...most of which will no doubt be used up in lunchboxes this week!

    Just a Victoria Sandwich Cake but as I am at my Dad's I had to use his mixer and electric oven. I missed my mixer and gas oven! :)
