Don't forget you can freeze mashed potato - take a tip from Aunt Bessie and open freeze it in spoonfuls, then put all the frozen pellets into a bag to store. That way you can unfreeze the amount you need, or even put the frozen lumps on top of a shepherd's pie or fish pie and put it straight in the overn.
Quick warning - mash looks very odd when reheated after freezing but stir it up well and it's fine.

I have loads of frozen mash as I've decided to start freezing any leftover mash rather than throw it away but now I've got loads. I know I can use it to top shepherds pie etc or just reheat it and eat it as an accompaniment but I was thinking of more of using it in a recipe. Any ideas?0 -
You could pipe it onto a baking tray merangue style and bake them on high heat for about 30 mins. Think it's called Dauphinoise spuds.
Mix with cabage & spring onions.
Use to make cornish pasties
Meat and potato pie

E'S POTATO CROQUETTES
leftover mashed potatoes
diced onions
chives and parsley, finely chopped
heavy cream
salt and pepper, to taste
Tabasco
Worcestershire
Saut! onions until translucent, but not browned.
Combine all ingredients (to taste). Spread on sheet pan. Refrigerate until firm. Use a biscuit cutter to make rounds, then dredge in flour, then egg, then breadcrumbs. Bake on a tray in a 350°F degree oven until brown and crisp
