    potato bread is gorgeous - nice toasted once it has cooled, or eaten hot off the pan and it freezes well . Some people will fry it over here with a cooked breakfast but i prefer it toasted . Nice with bacon and eggs and beans :D

  • I freeze my leftover mash in suitable portion sizes, and then defrost and heat slowly up on the hob for those nights when I want mash but dont have the energy to do the mashing :D
  • I often put left over mash in an oven dish and warm it up for 20 mins to go with meat I cook. I just freeze it and defrost as and when.

    I also do a massive cook up of left over mash, and other left over veg, with bacon, and onions. Often have that with some bangers.

    I feel so hungry having read all the great ideas!

    Last time I had leftover mash I made potato cakes. Put the mash in a bowl, added a little flour, a beaten egg, grated cheese and a little chopped onion, seasoning. Mixed well then fried in butter and oil. They were ridiculously delicious for something so cheap and easy!
    Trying to spend less time on MSE so I can get more done ... it's not going great so far! :)

    I made my kids potato cakes for breakfast this morning with a bowl of leftover mash. I just added enough flour to make a manageable dough, shaped it into 3 burger sized cakes and fried them till browned on both sides. The kids ate them with a rasher of bacon each and a squirt of ketchup.
  • gnocchi? Don't have a recipe as such but add enough flour and beaten egg to make a stiff dough, then roll into little balls and poach in boiling water until they float. Arrange in a buttered dish and pour over a jar of Dolmi*. Top with lots of grated cheese and bake until bubbly.

    you can also recycle it by adding an egg yoke a little more seasoning and pipe or dollop tablespoonfuls onto a buttered baking tray and baking in a hot oven for 20 to 25 minutes - (to crisp the outside a bit more drizzle some oil over them). yummy with chops or some nice gammon.
  • You could also mix them with egg, some veg etc to make a sort of omelette/frittata. Or try adding leek and stock cubes, water and blend to make soup.

    Well, I second bubble and squeak, cheesy hash, fishcakes, shepherd's pie...you can also fry up some leeks and carrots in a generous slice of butter, add the mashed potato and some milk and make potage bonne maman. Mmmmmmm.....

    Does anyone else make 'Russian salad' with leftover mash? This is what my mum used to do, and I often do it too as it's so yummy. I normally start off by putting the cold mash through the mouli-legumes, but if you don't have one of those, just use a fork and mash it together with:
    - salmon from a tin
    - mayonaise
    - chopped hard boiled egg

    To reduce the mayo content (which I feel bad about) a little, I use some HM low-fat vinaigrette. DH loves it if I use salad cream, though.

    other additions are: chopped gherkins, cold cooked (or tinned) petit pois, and/or other leftover cooked veggies like chopped cooked carrots, cauliflower, broccoli.

    If you want a change from salmon, chopped ham is nice too - or leave it out completely for a veggie version.
