I think my MIL used to make a cheesecake using Angel Delight, but she also added a jelly - mandarin if I remember correctly. So you could get a fruit flavour AD, get a matching Jelly, some fresh fruit, mix up the lot, put on your biscuit base, and let it all set. Me thinking along the lines of Strawberries, or Raspberries or a packet of that frozon summer fruit!
