6000 meals under 50p in 2010; feeding your family on a low budget

    Finally back to add my Carrot Apple & Raisin cake to the recipe list.

    8oz Self Raising Flour
    1/2 tsp baking powder
    1/2 tsp salt
    1 tsp ground cinnamon
    5 tblsp sunflower oil
    grated zest of 1 orange and 4 tblsp juice
    5oz light brown sugar
    5oz finely grated carrot
    1 medium eating apple, peeled cored and grated
    3oz raisins
    2oz pumpkin seeds
    icing sugar for dusting (optional)

    Heat oven 180C/fan160C/gas4. grease a 20cm round cake tin. Mix flour, baking powder, salt & cinnamon together in a large bowl. Separately mix together orange juice, sugar and oil. Add orange mixture to the flour with the carrots, raisins, pumpkin seeds and zest, stir until really well mixed. Spoon into tin.
    Bake for 50 mins to an hour -check with a skewer to see if its cooked. Cool on a rack and then dust with icing sugar if liked.

    No eggs or butter, so quite cheap to make - I think I costed it out at about 1.50 for the cake last time I made it.

    Building work carried on - another a pile of earth on top of the front lawn that used to be under the back lawn. DS are both excited every morning to see what new earth moving fantasy is trundling down the drive. Girls been off sick today

    Today's Summary - 18/18 meals 50p or under
    Summary Total - 424/468 = 90.6% = Target 91.3%

    Breakfast: 50p or under (6/6) (OJ/AJ's all round)
    OP - Lidl Muesli
    OH - Lidl Crunchie Oats
    DD1, DD2, DS1, DS2: Cereal

    Lunch: 50p or under (6/6)
    OP : Leftover Coq-a-leekie - 1/3 of left over = 33p
    OH : Tesco Brocolli & Stilton 50p
    DD1 : 1/2 Can heinz tomato soup - 25p (Sainsbury 4 for 2.00)
    DS1 : Quorn chicken slices 24p, bread 10p, LIDL tomatoes 5 at 2p=10p = 44p
    DD2 : Beans on toast
    DS2 : Leftover chicken 30p, Crisps (Lidl crusticroc 24 for 1.89) 8p, Apple 10p, = 48p

    Supper: 50p or under (6/6)

    OP : Chicken Wing 31p + Bread 5p & Tomatoes 10p = 46p
    OH, DS2: Leftover coq-a-leekie - 33p each (shared with me at lunchtime)
    DD1: 1/2 Can heinz tomato soup - 25p + Chunk HM Lidl Farmhouse Mix = 5p
    DS1: NCG 1/3 carrot & coriander (£1 sainsburys) = 33p + Large Piece HM Bread = 43p
    DD2: Omelette - 3 eggs = 30p + bread = 35p
    I think I saw you in an ice cream parlour

  • Misscousinitt - thank you for posting the carrot & apple cake recipe, I have some eating apples that need using up and my mum who loves carrot cake is coming round tomorrow so going to have a go at that! Sounds gorgeous, thanks so much!:T

    Hi Mark, I think you were looking into the costco option, but eggs there are 6p each, so DD2's dinner would be 23p, which might help :)

    Can I ask how old your lot are? My girls are 13,15 & 18 and somedays I'm just glad they've eaten something!
    OMG i have eaten this but never knew how to cook it until my daughter made it at school and brought he recipe home, so yum , and cheap too, now it is on our menu plan as a regular

    All over the place today - in more ways than one, but all the woopsies from yesterday went down well. Fridge is looking a bit boring at the moment so some resistance is building

    ooh that sounds yummy ellas - have to admit i'm a bit of a cheese addict, so this thread has given me something else to feel guilty about! I think your sandwich filling sounds pretty healthy - healthier than just a cheese and mayo sarnie anyway. how long does it last in the fridge for? a few days?

  • Mark - well done on all the whoopsied stuff...need to ring the changes a bit to stop resistance from growing..I'll give some thought to some nice cheap stuff that you can add to the fridge...

    I'm really impressed with how much you have achieved so far...keep up the good work...
