I'm sure that'll work fine, Panika! I think your version sounds nicer, actually, as long as you don't go overboard with the onioniness.

I've just made an Iranian onion soup with an egg floating on top, called Eshkaneh. It's another one from Veggistan. Apparently, it's peasant food that Iranians are sometimes embarrassed to admit to even having tried. Well, they're seriously missing out because it's bliddy LOVELY. Well done, Persian peasants! :T

It's very healthy (mainly veg, an egg for protein and a small amount of carbs) and a perfect mse recipe too. Girl called Jack would approve. Approximate ingredients per person would be 1 large onion, pinch of flour, water, tiny smidge of turmeric, things you've got hanging around in the cupboard/fridge (suggestions from the book are spinach, nuts, and sour berries. I used kale that needed using up today. The internet says potatoes are another common addition), stale bread and an egg. Tiny bit of mint if you've got it, for the garnish plus salt and pepper (and I've got mint growing on my windowsill, so no problem there.)

I was expecting it to be a bit bland tbh, but it wasn't. The only adaptation I made apart from swapping spinach for kale was that I made garlic croutons to go on top instead of eggy bread ones, since I needed my last egg for floating on the top.

One to add to my regular repertoire.

  • An extra new recipe this week. It's another one from Veggistan, but no Arabic name this time. It's just black eyed bean and lemon hotpot.

It's a basic veg stew made with carrot, onion and celery, with a tin of black eyed beans, lemon and parsley. It's another HIT .

I don't normally like cooked carrots much because they're quite sweet, but the lemon balances out the sweetness nicely.

Very cheap, very easy. Lunches for the next few days sorted.

This sounds tasty, have just googled the recipe.

Did you use pre soaked dry beans, or did you use a tin ? I would guess if using tinned then I could reduce cooking time ?

I used tinned this time. I just added them nearer the end.

The cooking time was still quite long because you don't even add the potatoes until the carrots, onion and celery have already softened a bit. On the bright side, it is quite a low-maintenance kind of meal and not the kind of thing where you have to stand over it stirring.

I went to Abergavenny Food Festival yesterday and got some diced goat, so I'll have a look for a recipe to use that. Either curry goat or something Persian/North African.

I'll post here when I've used it.
