The soup tastes a lot better today. It must be one of those recipes, like chilli or most curries. I now officially rank it as yum.

This is just as well, because I made the full amount and there's only me to eat it.

Afghan aubergines and yoghurt from Veggiestan again.

YUM. :D Delicious. Much better than I was expecting it to be. Unfortunately it involves frying slices of aubergines, so it took flipping ages!

It's like a frying pan version of imam bayildi layered up with garlicky yoghurt and mint. Eating it now with mildly spiced green lentils, pitta and a glass of wine. Mmmmm.

Next time I'll just bake the aubergine and tomatoes with a load of olive oil and serve the yoghurt over the top. Basically the same thing, but much easier.

Am I the only one left doing this? It's getting lonely in this thread :(

I think I need to find a Mary Berry cookbook. I've never heard a bad thing said about any of her recipes.

Mmm! I bet that would work well with tofu too, so I might give it a try sometime.

Tomorrow I am going to cook turkey and spring onion burgers. They were supposed to be turkey and leek, but leeks were in massive packs in Te**o so I am going to replace them. I hope they will taste ok.:)
