The main rule you need to observe to make an edible quiche is NOT to !!!!! the shortcrust pastry (1/2 fat to flour recipe bound with one tablespoon of water per oz fat). If you do that the filling will leak through and you will end up with a soggy mess. I would suggest you blind bake the pastry first at GM 4/5 using some dried pulses / clean marbles to eliminate any air bubbles (these can always be re-used). Another good tip is to spread some cream cheese - Philadelphia or the supermarket value equivalent - on the base when part cooked. Then spread your sliced onion rings on the base and top up with cheese omelette mixture. Bake until set and you should have a delicious result that may be frozen if necessary.

I like the Philadelphia tip. The other thing to do is not have pastry. Use non-stick baking paper instead. I use 2 large eggs to 6 floz seasoned milk. This can be sized up in proportion - 3 eggs to 9 floz milk. You could replace some of the milk with cream. You can put almost anything in a quiche - bits of leftover chicken, cooked veg, tomatoes etc. I would slice the onions very thinly. Grate some cheese into the milk/egg mix, float the onions on top and then cover with a thick layer of cheese
Bake at Gas 6 (180 fan) for 10 mins then Gas 4 (160 fan) for 20 mins. Poke with a fork to make sure it is done inside0 -
A recipe I found on here a week or so ago (sorry not sure who posted!) was delicious. Not sure if you can call it a quiche as it has not pastry (so healthier and easier to make). 4 eggs, 2 cartons of cottage cheese and any filling you like. Bake in a quiche dish for approx 30mins at 180C. Easy peasy!

I really need a really simple to follow quiche reciepe. I am a terrible cook but this year I want to improve. I used to buy the Iceland cheese&onion quiche for £1 but its gone up to £1.50 for a smaller size! I am a complete idiot in the kitchen so something idiot proof would be great.0 -

Im looking for idea's for my kids lunch boxes and i thought about making mini quiches, you know like the ones you can buy frozen for buffets etc.
Anyone had any luck making these from scratch???
would i just use a small fairy cake tin? same ingredients as a regular quiche but smaller?? Also do you think they would freeze well?? im thinging making them up on batches of 24 since i have 2 cake trays??
