If you don't have greaseproof paper or foil try gently pricking the base all over with a fork before you bake it for 10 mins, this helps stop the pastry from rising and leaving no room for you filling,( but not all the way through iyswim or you filling might leak out!)

Thanks for the advice I have just removed my 1st ever home made quiche from the oven and it looks fab. I am sooo pleased I love the quiche I buy from the market but it is too expensive and the supermarket ones are not as nice. Heres to hoping it tastes as good as it looks0

If you really want to bake blind. Just cross a couple of teaspoons on the base. This stops it rising. I never have anything else suitable for blind baking and this works fine for me.Anyone who lives within their means suffers from a lack of imagination:beer:

i have just tried my first attempt at shortcrust pastry (in the form of jam tarts) and got the big thumbs up - so now i'm getting ambitous.
i wanted to make a quiche, but i don't have a flan case - can i use a normal oven - proof dish (i'm sure i saw jamie oliver do it once lol).
Also, is there any quiche recipies that need less or even no cheese (trying to lose some of this spare tyre!)

hi a normal dish will do fine just make sure you grease it well ,
i never use cheese in a quiche as my family dont like cheese
the easy way to do it is make up a mix similiar to a scambled egg mix and add any manner of veg or meat to the mix pour into the pastry and cook on gas 5 190c i think till the egg is cooked through and enjoy0 -
