    I've just been making various quiches and egg and bacon pies at work and I would advise against pre cooking the pastry. I would recommend cooking on 200c/gas 6 for 45mins-1hr. If the top is browning too quickly cover with foil.
    I agree with Penny about using metal flan tins, though have to confess that at home I only have ceramic ones!

    I always line mine with parchment and uncooked dried pasta shapes. Does the same job but check to make sure they aren't singeing!

  • I always put mine on a preheated baking tray and that helps

    If I make a quiche or a pie I usually; pr1ck the pastry with a fork; make a circle of greaseproof paper; fill with ceramic beans but as others have said, pulses, rice or pasta would do the same job, and bake for 20 mins. I would then give the pastry an egg wash while it's still warm and that kinda creates a liquid proof barrier. Fill it when it's cooled down and place the case on a metal tray.

  • hi everyone
    i have leftover pastry from yesterdays meat and potatoe pie and thought i would use it for cheese and onion pie. i saw a recepie on here once, i know it had mashed potatoe in it and obviously cheese and onion. does anyone have the recepie.

    Hi bolton! here's how I did it(there's a whole thread here somewhere on cheese and onion pie)

    fry onions, peppers and mushrooms.
    line a dish with your pastry and bake it blind so that its lightly cooked. Put on the fried veggies and top with cheesy mash. I put grated cheese on top and slice a tomato on it too then pop it in the oven to heat up and melt the cheese. I usually have it with beans - if you're a meat eater I think it goes well with bacon. One of my all-time fav meals!:)

    I use plenty onions, parboiled potato cubes and a thick cheese sauce instead of mash, (often add some cooked broccoli or whatever as well) and it has a pastry top as well as bottom - this mixture also makes great cheese pasties for packed lunches etc.
  • i remember when we made cheese and potato pie in home ec at school it didnt even HAVE pastry.. it was just mash with cheese and onion mixed in and baked.. i felt totally cheated.. what a cop out!!
