Cheese and Onion Pie

I would like to make a cheese and onion pie or cornbeef and potato pie.. My best mate made one for my birthday buffet, the other week, but she don;t weigh anything - and i am not that clever to do that yet.

The thing is i haven;t got a clue how to make the pastry, (i am ashamed to say) Does anyone have a easy to follow receipe that i could use. Or should i just cheat and buy the ready roll stuff, but again which one do i buy...

Looking for some help !!!!:confused::confused:
Hoping that when I start looking after the pennies, and the pounds will take care of them selves :j

    If your not sure I would buy the ready made stuff. I buy that as I am no good at making pastry either :o

    Shortcrust Pastry

    8oz plain flour
    2oz white Flora/Trex
    2oz marge
    cold water to mix

    Sieve flour and add marge and white fat. Rub fat into the flour with finger-tips - but don't over do it because if your hands are hot then this makes the pastry hard. Mix with a couple of tablespoons of COLD water then gather the pastry together. Again don't handle the pastry for too long. Wrap in cling film and chill in the fridge for 30 mins before you use it.

    I try to use White Flora rather than lard as it makes a nicer, softer pastry. Hope that you enjoy it!

    Corned beef and potato pie sounds really nice, i take it you put slices of raw potato over the corned beef and cook as a normal pie. You'd never believe I trained as a chef but that was 14 yrs ago and never took up the trade lol.:o

    My Nan used to mash the potato and then mash a tin of corned beef into that and make a 'plate pie' if you know what I mean? She made a pie on a dinner plate :D

    I'm a veggie now but I have fantastic memories of being allowed a slice of this cold before I went to bed if I was a good girl. And if I was extra good my Grandad used to slice the top layer of pastry off, spread on some brown sauce and then put the top back on :D

    The thought of eating it now makes me want to puke as I haven't eaten meat for 18yrs but the memories make me all warm and gooey inside :o

    My dad used to do all the cooking when I was little and he used to make pastry at least 2 or 3 times a week. He would mix it with one hand so that he had a clean hand if the phone rang or he needed to answer the door... I very very occasionally make pastry now but every time I think of him and his one handed technique ~ it was fantastically light too.

    All his pies were 'plate' pies!

    I love cheese and onion pie :drool: I'll have to make one this week I think now :D

    I'm being really dim, what do you do with the cheese & onion under the pastry? Surely it isn't just cheese & onion?:confused:
    Ans I am also confused about the corned beef pie? Chunks of corned beef under a pastry or sliced potato top?:confused:
    Just writing next fortnights meal plan & shopping list, idiot proof instructions would be appreciated please so that I can include these:rotfl:

    Do you put owt else in a cheese and onion pie? Is it a specific kind of cheese or will good old cheddar do?
