    Do you mean the sort of cheese and onion pie that used to be served for school lunches?

    If so the filling is 2 onions chopped and simmered in salted water for about 10 minutes, drain.
    Beat an egg in a bowl, add 8 oz of grated cheese and season with s&p, mix in the onions when they've cooled slightly.
    Make a plate pie in the normal manner, I put a little chutney under the cheese and onion mixture.

    Got a recipe that Nan used to make but no cooking instructions.

    How long and at what temp should it be cooked? (shortcrust pastry)

    Im going to make cheese n onion pie for tea, usually if i make pie I only use pastry on the top but thought it wouldnt really work for this.

    Can any one advise how to make it without a soggy pastry bottom

    somone with a bit more knowledge may be along shortly but i sould guess at blind baking the pastly first like you would with a quiche??

  • I always line mine with greaseproof paper and weigh it down with ceramic beans and bake for about 20 mins first.

    I dont have any ceramic beans, would pricking with a fork be enough to stop it rising?
    Hoping to eat it cold in slices so i need a decent bottom.

  • I wouldn't advise cookibng the base first ;) Bake your pie in a metal flan ring, and sit that on a metal baking sheet. Assemble immediatley before it goes into a hot oven, and it should cook without going soggy.

    Hi there
    Try pricking the bottom, line with greaseproof paper and use rice or beans/pulses you don't want (then keep them to re-use another time). Bake 'blind' for 10-15 mins, remove greaeproof etc and then cook 'empty' for 5 mins or so beofre putting filling in the case.

    Thanks guys, just made the pastry and will fill when the kids get back from school, so will let you know later how it turns out. Promised work id take some leftovers in tomorrow for lunch so really want to get it right or ill never hear the end of it lol!!
