Oh dear! I noticed three bottles in my cupboard this week and searched this forum for any threads about Baileys going off .... only to discover that I'[d asked the question myself two years ago. Perhaps I ought to tell the inlaws to stop buying it for me. I do like it but don't get through it fast enough!0

I made some baileys fudge the other day. I think the recipe was off here somewhere. Basically a tin of condensed milk heated with some sugar and butter till it goes like toffee. Then stir in chocolate till the heat melts it and the baileys. Cool on the side then chill in the fridge. Chop into little pieces. Because of the choc its almost a truffle type taste mmmmm.
Been keeping mine in the fridge and when I get a sweet craving grab one (I cut them fairly small as I am trying to loose weight lol). Stops me grabbing something worse and is so rich it gives me than chocolate/sweet hit without eating a 1000 calories on the hop rofl.

ISLE OF ISLAY CREAM
This recipe comes from the beautiful western Scottish island of Islay (pronounced “eye-luh”), where the peat in the soil and water gives the local Scotch whiskies an earthy taste like Irish whiskey. This was not to some locals liking, so they devised this way of enjoying it.
Makes approx. 1 litre
INGREDIENTS
400g tin of condensed milk
170g tin of evaporated milk (eg. "Ideal")
250ml carton of UHT long-life single cream
250ml of Scotch whisky or Irish whiskey
4 teaspoons of coffee essence (eg. "Camp")
METHOD
Pour the milk and cream into a 1 litre jug or bowl.
Use the whisky to wash out the milk and cream containers, then add it to the bowl.
Add the coffee essence.
Stir together.
Pour into a clean bottle.
ALTERNATIVES & ADDITIONS
Adjust the amount of coffee essence to taste.
TIPS
Don’t use your best single malt for this. Any cheap supermarket blended brand will do.
Keep it in the fridge.
And, no, I don't know how long it will keep for. It’s never stayed around long enough to go off, either.The acquisition of wealth is no longer the driving force in my life.0
