I use a similar recipe to shell's, but find that equal quantities of dark and soy sauce give a more 'chinese takeaway-like' flavour.
Becles, no, it should be fine. Even 'lightly cooked, the eggs will still be set - it's raw (as in mousse) or partially cooked (eg soft-boiled with runny yolks) eggs you need to be wary of.0 -
As long as you cook the egg properly it will be fine. It's just if it's not cooked through that there is a Small risk. Frankly, it's one of the few things I'm keeping down. We buy fresh organic eggs and I don't worry too much if the yolk is slightly soft.
For those who find themselves out of eggs or can't eat them, crumbling some tofu that has been frozen into rice instead of egg works a treat. Freezing tofu changes the texture and it becomes crumbly and very absorbant of flavours, so add your soy sauce and lemon or oyster sauce if you're not veggie and enjoy!May all your dots fall silently to the ground.0 -
the way i do it - and this is more special fried rice than egg fried rice is as follows:
basmati rice cooked and allowed to go cold (as several others have said, this is necessary)
1 onion, chopped
1 green pepper, deseeded and chopped
couple red chillis, deseeded and finely chopped
finger ginger, peeled and finely chopped
couple cloves garlic, peeled and finely chopped
Prawns
peas
just about any other vegetable you want to put in - it needs to be small, though
1 egg
mix of 2 tsp dark soy sauce, 1 tsp oyster sauce, 1/2 tsp chinese five spice, 1 tsp honey, 1/2 teaspoon lemongrass powder, 1 tbsp chinese rice wine and 1 tsp veg oil - put them in a jar and shake well
1. put wok on stove and get good n hot, THEN put in the oil and swirl straight away (the technical explanation for it escapes me but the chinese chefs do it this way)
2. put in chillis, garlic and ginger and stir fry quickly (enjoying the smells!)
3. put in onion and pepper, keep stirfrying and moving
4. then any other veg like your peas, and the prawns
5. when all your veg is getting towards the cooked stage, add the egg and stir like mad
6. when egg is cooked add the rice, and stir all the other ingredients through, warming the rice up as it cooks, then when its all warm enough, shake the jar again and chuck into the pan, and stir like mad, making sure its spread evenly through the rice.
serve and enjoy!
the above recipe also works well for stir fried vegetables, omit the rice and egg part, but think in terms of sliced rather than chopped veg, and add beansprouts too. Add the same mix shaken in a jar as i described above, and if necessary, mix a couple tsp of cornflour with cold water in a mug, then add this to the veg once all is cooked to make the sauce thicker, stir your veg through it to get them good and coated. OH loves this.

I have some leftover pork from yesterday and thought of putting it in Chinese fried rice. Has anyone got a good recipe?

apparently the secret to good fried rice is to have the rice boiled well in advance so that its cold when you fry it. I think its meant to stop it from sticking together in a big lump.
I would just dice the pork, stir fry it for a bit, throw in any veg that you fancy (spring onions and peas spring to mind, if you have them) then stir fry the rice for a bit until its all hot and then throw in your beaten egg.
I like to splash a bit of soy sauce and sesame oil in at the end too, although my Ken Hom cookbook tells me that this is not authentic and that it ruins the dish.....:D0 -

I like to do the egg first like an omelette / scrambled egg in the wok first, then chop it up. Then I stirfry bacon or pork in a little oil, add chopped spring onions, cold boiled rice, peas, the egg and soy sauce. I stir continuously til its really well heated through.
Its a really lush recipe. I did it for my M&Ds anniversary last year (ordered the mains from the posh takeaway and I did the rice and the chicken soup) - everyone thought it had all come from the posh place.
Some recommendation!!

the cooked rice definately has to be cold, otherwise it will be hard to break down and will go soggy once reheated.0

I thought i would share this with you. I was home alone last night and the idea of cooking for one is very depresssing, so had a look in the fridge and stumbled on a great way to do chicken fried rice :j .
It was soooo easy, you need:
Cooked Chicken (left over from a roast)
Cold Cooked Rice,
1 Onion Chopped,
Pineapple,
Cold Cooked Peas,
Cold Cooked Carrots,
1 Clove Garlic,
Gratted Ginger (if you have any lurking in the fridge),
Soy Sauce
Pop it all in a wok and cook till heated through properly, then just eat and enjoy!!
You can use any veg thats lurking in the fridge this just happens to be what i had leftover but this was so close to my favourite takeaway. And was so quick and easy to do. And much healthier!! :rotfl:
