can i use substitute one sugar for another?

just about to start making some smartie cookies and the recipes asks for light brown soft sugar and i've only got dark brown soft sugar...local corner shop only had demerara which i 've also got already could i substitute the light for dark or would there be a big taste/colour difference???

I have substituted dark brown for light brown and imoh it wasnt good , I have found using ordinary white sugar has made nicer cookiesVuja De - the feeling you'll be here later0

I'd go half and half, because dark brown alone will give it a deeper chewy, almost burnt toffee like taste (good for me, but not popular with DDs).I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0

I am planning on making some cupcakes this afternoon, and all the recipes i have been looking at online are asking for caster sugar.
I don't have any in the house, just plain old morrisons granulated sugar
will this make much difference in the cupcakes?0 -
Not too much difference, caster sugar is finer so creams better with the butter, but I have used granulated before and it has been fine.0

i have never ever bought castor sugar, have always used normal granulated sugar for all my cooking and everything comes out fine.proper prior planning prevents !!!!!! poor performance!Only when the last tree has died and the last river been poisoned and the last fish been caught will we realise we cannot eat moneyquote from an american indian.0
