Its bits of green lime not peppers.

I'll inspect my bought jar a bit closer when I get home ;)

So do you actually eat the skins then?

And any comments as to how many jars this recipe would make?

Regarding the OP's recipe - surely you don't leave the limes in 8oz of salt in the final recipe!!!! Surely this is washed off?

What do you use your's for?
I am asian, thus the authority on this.

    ANYTHING

    The end :D

Any curry I have, dollop of lime pickle on the side. Or just with some poppadoms, or a chapati. Mmm

Having not tried the recipe I can't say for sure, but I'm guessing that the salt is all absorbed by the limes and turns gloopy with the juices...

As well as eating it with curry, I like it on toast! I started eating it on toast when pregnant, thought it might be a craving, but I still eat it now, so I guess it's just a great culinary discovery!

    Finally started the recipe tonight.

I must admit, I've been cowardly, and decided to only use 12 limes (halfing all the other ingredients) for this first batch, and just filled a large glass cookie jar with the 12 limes and salt (and now 1 hour in there's lots of juice).

Rather than cutting the limes into 8 pieces, I cut most of them into approx 16-18 pieces per lime, to make the chunks more "bitesize".

Can't wait now (I think I'm gonna add a few chopped chillies at the end too!)

Yes you do, and no, you don't.
The recipe as originally posted is correct. Just follow it.

Greetings moneysavers! I don't come on MSE so much these days, but I am currently making a batch of pickle and looked up the thread for old times sake. I'm really glad to see the recipe is loved by others too :)
