    Often recipes and things come up on here that might cost more than buying them ready made. If the limes aren't cheap enough, this could be one of them. But I honestly think that it's worth making things from scratch as they usually taste better and you can be sure of what's in them.

    I've never made jam/chutney type things before though as I am not quite sure what to do with sterilising jars and where to get the round grease proof paper to cover them etc. Is it easy?

    Well I think it's nicer home made, but I suppose I would wouldn't I. :o When I was first given the recipe I made it out of curiosity really, the salting of limes for two weeks intrigued me! But it has become a favourite and friends ask if I've got any to spare, so it has become an annual tradition. I have found that limes are often reduced to half price when they are getting a bit old, and for this recipe it doesn't matter at all.
    Re the jars, I just recycle jam or pickle jars with a screw top. Just wash them in hot soapy water (or run them through the dishwasher on the hottest cycle if you have one), dry thoroughly and place the jars on a tray in the oven for half an hour on a lowish heat (about mark 2 gas). Then when you have filled the jars put the screw tops on straight away. Once opened I keep it in the fridge. Hope this helps and that you find some nice cheap limes & spices :D

    like the other posters, on the side with curry dishes

    it's lovely mixed with mayo :) try it in a wrap with spicy chicken & crunchy lettuce

    split a naan (home made is best :D) & dot lime pickle & brinjal pickle on it, eat it like a sandwich & you get a really nice contrast of bites of salty/pungent/tangy & mellow/sweet

    Thanks for the recipe newleaf, I love lime pickle and have a local greengrocer who will look out for a cheap box of limes for me !

    I put it on cold roast pork ( belly for preferance ) along with my homemade Bramley apple sauce with sage . YUMMMMHHHYYY !

    I am going to keep this recipe to try when I get the opportunity. There's a lemon curd one on this board somewhere I want to dig out too, so I'm going to go on the hunt for some jars!

    I also make jam (we have a big garden and grow lots of soft fruit) so I find people save their empty jam jars for me. If you ask around your friends you'll probably find some. Home made lemon curd, yummmm!

    Dear all,

    In my quest for the perfect Indian curry, I desparately need a lime pickle recipe . At the moment , I am buying it from the shops but as I adore it and buy loads of it, I would like to try and make it at home! (even have it plain on a jacket potato!)

    Any suggestions?

    I started the lime and salt mixture off 10 days ago and it hasn't gone brown :confused: It's gone very soft and the juices have gone thick and syrupy; is it meant to do that? Was I supposed to take the skin off the limes? I forgot to ask at the time, I just chopped up the limes after giving them a rinse. :confused:

    Also.....I can't find any asafoetida, is there anything I could use as a substitute or is my lime pickle going to just be salted limes? :o

    Yes, you leave the skin on the limes. I've never made a batch that hasn't gone brown, so I don't know about that, but it doesn't sound as though you've done anything wrong - yes the salt does bring out all the juices and it gets quite wet. Re the asafoetida, it's available from Schwartz and Natco brands, we got ours at Tesco, and it's a beige powdered spice. It smells very pungent, I expect it adds 'a certain something' but the whole mixture is very spicy so I guess you could get away without it at a push, it just wouldn't be quite to the authentic recipe, - but hey!
