    Some stuff could maybe be frozen, I know the choc fudge I made is meant to be better frozen as its more fudgier and grainy so has a better texture. Im going to make coconut ice, ill use some for dd's fayre, eat some :rolleyes: and try freezing a wee bit and defrosting before trying anymore. I think fifteens would freeze ok too as my truffles have digestives in them and defrost great.
    I plan to get baking next week. Ill let you know about the stuff I freeze and if it defrosts ok.

    I remembered when I was at school, our cook taught us all how to make chocolate truffles, made with digestive biscuits, so I have searched high and low for a similar recipe and tweaked it a little, and last night made up a batch..... oh dear lord they are yummy.... now i'm not a Bailey's fan, but trust me, you have to try them:

    20 digestives, crushed
    10 tablespoons dessicated coconut (I used) or ground almonds (if you don't like coconut)
    1 tablespoon cocoa powder (not drinking chocolate)
    tin condensed milk (not the tiny tin)
    3 1/2 oz melted butter (I used stork which was fine)

    capful of Baileys (any variety - I used caramel creme)
    chocolate vermicelli for coating

    Petit fours cases

    Mix together dry ingredients (except vermicelli).

    Add condensed milk, then melted butter, then Baileys and mix well.

    Form into balls & roll in vermicelli.


    Place into petit fours case and onto a tray or plate and put in the fridge to set a little, they are less stodgy if they are left, but the hubby was lingering and only 4 have made it through to this morning!!

    These make quite a few, depending on the size of your balls, so you could half the mixture, but they get eaten sooooo quickly its not really worth it lol.

    Hee hee, sorry....

    I am trying out recipes because I have decided to make a box of homemade choccies to put in the hamper for my mother in law. Today I will be trying the peanut brittle recipe and the mint crisp from this forum, a fudge recipe from the good food guide, and a turkish delight recipe also from the good food guide. I have bought a box from card warehouse for 59p and some ribbon for decoration, and hopefully the sweets will go down a treat!!:D

    Lol.... let me try it first, wouldn't want anyone to go out and buy ingredients they might not need.... i'll let you know this evening if all turned out well!!

    Ok..... the turkish delight is setting as we speak.... it says it needs 24 hours, but the hubby will likely want some before then, so I will let you know how it tastes as soon as possible.

    Also, thanks for whoever mentioned the chocolate mint crisps idea, I have just made them as sweets and they are absolutely gorgeous!!
