Nut loaf (A veggie friend used to do one using Parsnip & Cashews as the base)
Pizza - kids love DIY so just do bases and lets them do their won topping

I have 3 veggies in my house and I just adapt whatever we are having for them with veg.0 -
As we have our little chickies who now are in full production (most days we get 3 or 4 eggs) so we have loads, we are going for an omlette or quiche night. This will also be a bit of a use up night so may be veggie or may not depending on whats in the fridge lol. But eggs are a great source of protein and not a turn off to most meat eaters. Also v. filling.

I'm very fond of nut-roasts and usually add either grated carrots, chopped mushrooms or chopped peppers to ring the changes. These are very rich and satisfying, so I think even carnivores might find them acceptable.
Another easy recipe is Melanzana alla Parmigiana (aubergines baked in tomato sauce with cheese on top) and I've just found a really nice-sounding recipe for baked courgette cake in one of Cluadia Rosen's recipe books which I found for a quid in a charity shop a few days ago which I'm going to give a try later on today.
Anyone have a good veggie recipe for bell-peppers? I picked up eleven of them for a pound in the market yesterday and need a few suggestions as to how to use them up.0 -
i've just remembered one of my most fav meals when i was little.
i always remember every saturday i was about 5, we lived in a little cottage. My dad would have grand stand on and that annoying like computer sound when the scores would go up on the tv screen. ( no idea what it was) my mum would serve hot corn on the cobs with loads of butter, followed by either a jacket spud and butter or home made lentil soup.
It was one of the best meals ever. On the isle of wight we have a garlic farm and i'm sure it the same place that used to also sell corn on the cob( i'm going back 24 yrs tho). When in season my mum would go over and they had huge vats of sweetcorn and you would fill a sack for not very much money.Mum would buy a couple of sacks, then we spend the rest of the day pealing them. then she would bag them up in 3 and freeze them down. so we had a yrs supply. sorry bit off topic, but i love it when a fantastic memory comes wizzing back.0 -

Bells peppers roasted with onions and and garlic blended with plain cream cheese makes a lovely pate0

I had the roasted, stuffed and pasta sauces covered already but many thanks for your suggestions.
That pate sounds like just the ticket but it's a crying shame that I used the blessed cream-cheese for something else only yesterday. Damn! This particular cooking session might have to be put off until I can get to the shops....0
