    Jut found this and a couple of people asked about mexican lasagne - basically I made a spiced veg sauce/ filling - corn, pepper, sweet pots, onions, garlic, cumin, cayenne, made a beany mush buy whizzing a tin of kidney beans with some cumin, seasoning. Spread the beany gloop on a tortilla in a pie dish topped with veg, sprinkle over cheese - repeat x4, top with cheese and bake til golden and bubbling

    Meatfree meals this month are a repeat of this, egg chips and beans, butery dahl, rice and veg curry and pasta puttanesca (minus anchoivies)

  • Hi all

    I'm just about getting to the end of my tether with meal planning and food shopping!

    Does anyone have any meal suggestions for me and OH - I don't eat meat (I do eat fish), OH is a meat and fish eater but won't eat Quorn, soya etc. I will cook 2 meals but the cost is getting too high now.

    Need to be as cheap as poss..I spend ages searching on the net but everything involves a lot of and/or expensive ingredients

    Done to death already are: Jacket spuds, mac and cheese, stir fry

    This is a copy of a post that I made yesterday that may help:

    On meat free days we have pizza, omelettes, quiche, pasta with sauce, pasta bakes, veg lasagne, veggie curries, vegetable chilli, filled baked potatoes, mushroom risotto, soups or salads with crusty bread, pannini or a cheap night eg beans, mushrooms or scrambled eggs etc on toast.

  • Cauliflower, chick peas and cashews make a nice veggie curry. I usually make a korma-ish sauce - basically like a vegetable soup but thicker, adding curry powder and coconut and ground almonds. You can mix this half and half with sweet and sour to make a chasni sauce. Add cauli, and tin chickpeas and cook, add cashews right at the end.

    Most meals you can make the standard sauce [curry, chilli, pasta, stew, tomato spag bol etc] and then split it and pour half over your choice [quorn, soya] and half over his [mince, chicken] and cook for a few mins and then serve. You could even pre-split the meat into portion sizes and freeze, then defrost and cook whilst you are making the sauce.

    As you are doing this, he obviously will be doing all the washing up so can absorb the extra 2 pots needed for the faff.
    If you haven't got it - please don't flaunt it. TIA.

    your OH's if you want

  • ...and if all else fails... Beans on Toast ! :) Never fails to disappoint in my house, and grate cheese onto it with black pepper.

    Cook some pasta

    Put some butter or olive oil depending on preference into a large pan along with a couple of sliced mushrooms, crushed garlic and parsley.... Grind lots of black pepper on the top. You could add a bit of grated cheese on the top at the end.... I keep finely grated parmesan in the freezer so I can just use a tsp at a time :D

    Add the pasta and stir - Yummmmmmy and ridiculously cheap!!!
  • Butternut squash rissotto,onion,butternut squash,rice,lots of salt and pepper and at the end you can stir in some pieces of bacon to OH's if desired.
