    Why not have a look at www.cheapfamilyrecipes.org ? Vegetarian, vegan and meat eaters menu plans are on here. I love this site and have tweaked a few recipes to suit our tastes.Great value for money - Good luck x

  • Tonight we had veggie cobbler - basically stew topped with cheese scone- onions, garlic, peppers, courgettes, carrots, onions, turnips, blackeyed beans, chopped tomatoes and mixed herbs, chilli sauce (everyone has their basic tomato sauce recipe with which to add whatever veg (frozen and/or fresh); then put in oven dish and lay cheese scones all over the top till covered, grated cheese and then in the oven or under the grill to brown. The scone makes it very filling! Half of the veg used were frozen by me - peppers, courgettes etc that usually end up in the compost at the end of their life inthe fridge, now I just slice them up and put them in freezer bags before they go off and can then throw quite a variety of vegetables into dishes without spending hours chopping on nights when I don't have much time.

    Hi Money-Savers!
    I REALLY need some help.

    I have 3 friends coming over for dinner on Saturday and I am stuck for a starter and main course!!!

    The problem is, one of the girls is Vegie. I will still use meat but whatever I cook will need to be "adaptable" for vegies.

    Has anyone got any ideas? I cant afford to spend a lot and I am not the best cook in the world so nothing too complicated!

    Any help would be very much appreciated!

    Grilled or fried halloumi makes a delicious starter for veggies and meat eaters - serve with salad and a lemon and chilli dressing.

    Cous cous is an easy and cheap main - make a meat version with chicken, and veggie version with butternut squash and aubergine or mushrooms.
    Think big thoughts but relish small pleasures

    I am not a fan of cous cous but the Hallumi sounds like a great idea! How do I cook it??

    Moroccan Stew with cous cous

    Onion, Garlic, Root ginger, 1 tsp ground cumin, 1 tsp gr coriander
    1 tsp turmeric, 1 tsp dry chilli flakes, Chick peas, Can chop tomatoes
    2 carrots, 2 courgettes, 1 red pepper, 11oz butternut squash
    225 ml veg stock
    11oz cous cous
    S&p
    Coriander
    Mint leaves

    Method
    Fry onion, add garlic, ginger, spices, veg and stock. Bring to boil and reduc and simmer 20 mins until veg tender.

    Put cous cous in bowl, season and pour over boiling water to just cover. Cover with cling and leave 10-12 mins, Fluff up and stir in herbs.

    Put dollop of crème fraiche on top to serve,

    Enough to serve 4.

    Recipe says 20 mins but i leave on slow for maybe an hour or so and the flavour improves. I find veggies and meat eaters alike love it. You could always serve some meat too if you wanted.

    Slice the halloumi cheese (for 4 people two packets would be a nice generous portion) across the short side into thick slices - about eight per cheese.

    Coat the cheese in flour, then pat off excess. Fry in a little olive oil in a hot pan till golden on one side - about 2-3 mins, then flip and cook the other side.

    Make a dressing - oil, lemon juice, S&P and a little chopped chilli and coriander. Serve on salad leaves.

    Halloumi is famously 'squeaky' - but we love it and it is very moreish.

  • How about fajitas? Just cook the veggies and meat separately and put on separate plates so that veggie friend can just take from that, or do her a separate plate of her own and add extras such as kidney beans, mushrooms, aubergine etc?
