or, start with a soup--perhaps not very exotic, but very cheap. If you wanted to embellish it a bit, serve with a large hm crouton with cheese melted on top.
Alternatively, I find slicing open a wheel of camembert, filling with artichoke hearts (marinated) and fresh basil then baking and allowing people to dig in with HM bread always gets good reviews. You can get the cheese for under £1 a wheel at Aldi, and the artichoke hearts are under £2--with the basil it would be about £3.50 to serve 4 generous starter portions--so a bit pricier than soup.
I also think bruschetta with different toppings can be nice. Try mozerella, tomato, basil, cucumber or pepper or make up some HM guacamole (with plenty of lime juice to prevent it going brown) and spread that on.
(I mean goat cheese in risotto is fab--although my cooking isn't too bad!)
For mains--perhaps small tarts although I'm drawing a blank on fillings, or a vegetarian risotto--be sure that if you use parmesan it is "veggie parmesan" or I made a risotto with goat cheese, basil and mangetout this weekend that was fab.0 -
You could do a roast dinner and just don't give your veggie friend the meat.I have been a veggie for over twenty years and don't want people putting themselves when I go over.I am an odd one though I don't like rice,pasta or mushrooms so I have a hard time eating out.0

How about Mushroom soup, vegetable soup or french onion soup for a starter.
You could do sausage casserole with ordinary or veggie sausages. Or you could do a stir fry.0 -
I had a similar dinner party conundrum recently and did home made breadsticks with a baked Camembert to dip into as the starter, and sausages braised in cider with onions (veggie and meaty in two separate dishes, obviously!). Make it easy on yourself with a dinner party by doing something you can make in advance and either keep warm in a low oven, or reheat when your guests come.

Hi, Mr Lema and I eat a lot of meat based meals and I wondered of any of you would kindly share your favourite veggie meals please? Mr Lema hates vegetables as a rule although he does like Veggie Pasta Bake but its not all that health.

Do you like/are you willing to try Quorn (or other meat substitutes)?
I've been a vegetarian since I was about 13 and most of my meals are the same as everyone elses, just with a meat substitute
For example, I'll use Quorn mince to make chilli, cottage pie, spaghetti bolognase, lasagne etc. Anything like this I usually bulk out with some lentils as well - helps stretch the food out and also some nice added protein!0 -
Pasta bake is very nice and so is macaroni cheese.
Colourful steamed veg on a plate.
Stir fry is a favorite with mushrooms, peppers, onion and whatever veg I have.
Scrambled egg on wholemeal toast with grilled tomatoes.
Cauliflower cheese and jacket potato.
Rice, pepper, onions, mushrooms, sweetcorn and what veg I have.
I think the key is to use what you have and make it colourfulThe secret to success is making very small, yet constant changes.:)0
