We are meateaters but try to do a couple of veggie dishes a week. I've found stirfry done with peanuts is a good one, spaghetti bolognese done with veggie mince, poached egg, chips and peas, thai cauliflower curry, ...... OH is not a natural veggie and turns his nose up at lentils and most pulses:D

lovely uber cheap veggie recipe I do a lot is dahl -
fry up 1 onion + couple of cloves of garlic
add 1 teaspoon each cumin, coriander, tumeric + chilli + 1/2 teaspoon curry powder and fry together for a minute or so
add 1 cup red lentils and enough stock to cover
simmer for 1/2 hr or so, adding more water if you need to
ready when its all lovely and mushy
I usu serve it with naan bread + mango chutney, but even cheaper just with rice.
If you want it less spicy just use less chilli + curry powder
(This does enough for 2 good portions and I reckon costs no more than £1 for the whole meal)Sept GC lost track/£160

Mushrooms are good for replacing the "meaty" texture in pasta sauces etc.
Cashew nuts in a vegetable stir fry - if you toast them in the hot pan before adding other ingredients they're even yummier - but be careful not to burn them!
Hmmmm... someone already posted bean chilli - it's particularly nice served on a bed of plain nachos. You could serve with cheese or guacamole. I'm going to try introducing one meatfree day to my devoutly carnivarous family. i was veggie for years and love beans, lentils etc but they don't. DS isn't a huge fan of cheese.
Anyone got any suggestions for some recipes to get everyone on board with the idea? I don;t want to do meat subs like quorn/ soya as I hate them!People seem not to see that their opinion of the world is also a confession of character.

What about meals like tuna pasta ,
Tomato and cheese pizza ( or veggie toppings) ,
Jacket spud with quiche and baked beans,
egg and chips,
brocoli and cheese pasta,
green lentil chilli con carne with rice,
red lentil and spilt pea loaf ( i think it a delia smith recipe) you slice it and serve it with roast spuds, veg and gravy
fish, chip and peas.
bit too early for me at the mo to think about main meals without getting very hungary,lol. Will have a bit more of a think.0 -

As I was brought up Catholic, we always had a meat free day on Fridays when we usually had fish. This is probably the reason why I love fish so much and am trying to convert my wife, slowly succeeding after 35 years of happy marriage:smileyheaTo Dare is To Do:beer:0
