I've just made a list of the contents of my cupboard, fridge and freezer. I reckon I've got the makings of 2 weeks worth of dinners; all I need to get will be some veg now and then. Amazing!0

Okay here's my contribution - from my days of living on £60 / week (inc rent+bills)
Parsnip lemon rice:
several slightly soft parnsips, 2 lemons, rice, olive oil
cut parnsip and lemons into chunks
Roast parsnip and half the lemon chunks in olive oil until sweet and soft
put parsnips, lemon chunks and rice with roasting juices into large pan and add water
cook rice as usual
DON'T burn the parsnips! if you do it will taste yucky!!! The idea is to bring out the sweetness of the parsnips. Seems to work best with long grain rice.DEBT: £500 credit card £800 Bank overdraft

Sausage and bean casserole
2 cans chickpeas
4 sausages lurking in freezer
3 out of date leeks
2 onions (nearly sprouting)
half a garlic bulb (took of the green sprouting half)
2 slightly soft carrots
half a left over packet of sausage casserole mix (probably ages old but still smelt spicy)
bit of left over red wine

I was tidying my kitchen cupboards today when I found a half jar of red lentils, packet of passata and a clove of garlic. I knew I had an onion and half a sad looking red pepper in the fridge so, I fried the onion and garlic added the red pepper (and half a tin of tomatoes that No 2 daughter had left in a bowl in the fridge) passata, a squashed veg stock cube and the final squirt of tomato puree that was also lurking together with a pint of water and then the red lentils. RESULT a very tasty, and filling dish. Success! I can't wait to try another make something from nothing day:T0

Hi all. It's taken me so long to read thru & try all ure lovely idea's.
The Pasta bake went down a treat & OH loves it & asked for more lol. So i adapted the Tuna bake for chicken. Put the cheese & crisps crunchy topping on & it was delish. I hate pasta shells ordinarily & needed to use them up & they served 2 massive roasting dishes FULL (gone to rest in freezer). Friend popped by today & offered him a bake portion & he really enjoyed it.
I am enjoying this thread immensely (thx sis)

Hi everyone.
Just wanted to say how great this forum is! As a very in-debt teacher, I'm really looking to get myself straightened out. My goal is to be able to afford a mortgage by 2010 (I know that seems ages away!). I'm getting married next Saturday (have tried to be as sensible as possible with my budget, whilst still having a wonderful day!), so have decided that August 1st will be the start of my very first challenge. I must admit, I am constantly ashamed of what I throw out, and when I did a store cupboard check yesterday I found I must have at least a month's worth of tins, and a ton of rice, pasta, lentils....!!
My lovely hubby-to-be is very supportive of this, and my neighbour has said I can have some space in her freezer when we go away on honeymoon so I don't have to throw away anything.
I'm really looking forward to trying out some of the great recipes, and hopefully I can post some of my own.
