What about a potato and carrot rosti with some chicken on top and an Italian stylee tomato sauce - using the herbs you like - on top of that.Looking forward to the future.0 -

I'm just updating my list so I can try to work my freezer down a bit to defrost it....I can't resist a bargain though & keep buying more or else I make batches of things & freeze them.

it's just me for the next 10 days or so (daughter is visiting her father right now) so i've been making a point to use up stuff that she doesn't like much to get it 'out of the way'
i don't normally buy leeks, i prefer onions but i had tried out a local box scheme and they gave me some so i made a pot of leek and potato soup using 2 leeks and about 6 potatoes, some spices and 2 chicken stock cubes in the slow cooker. i added some whoopsied cream to this (got a bunch in the freezer that needs using up!) and it was lovely. i had it for breakfast yesterday and for 'brunch' today. today i also remembered i have some stale ryvita with pumpkin seeds so i crumbled those up into the soup and it was even yummier and soooo filling. the remains after that went into the freezer for later.
i'd been given a bit of food including a big bunch of asparagus (heaven!), some mushrooms and some wine so i decided i should use those up as the wee one isn't that keen on those things.
last night i chopped the asparagus stems in half and kept the bottoms of them in the fridge for today. i sauteed the tips in butter til they were nicely browned and slightly limp, they are truly heavenly like this mmmm
i also finally dug out a very old package of stewing steak from the freezer (a whoopsie) since it was just me i only used half of it last night. i seared it in the pan i had started sauteeing my red onion and those mushrooms i was given. i let it cook slowly then to get as much as the juices as possible, removed the steak, added the onions and mushrooms back in then added in some whoopsied cream i'd taken from the freezer, a tiny bit of old blue cheese and added the remains in the bottle of cava from new years eve (not a big drinker). i let this reduce and poured it over the steak with my aspargus tips on the side... mmmm heavenly (the stewing steak was a bit tough but tasted good)
at lunch time i discovered i had some pate that was still good lurking at the back of my fridge so i put some on the 'stale' ryvita pumpkin seed crispbread and it was lovely, couldn't taste the staleness at all!
this morning i tossed the asparagus stems, the remaining stewing steak (i figured a nice long hot soak in the slow cooker would tame that beast!) some minced garlic, 2 potatoes and some sage into the slowcooker and cooked it on low all day. at dinner time i removed the meat and put the solids and some liquid in the blender, whirred it for a decent amount of time and added it back into the remaining liquid. normally i would strain this to get any possible tough bits from the stems but it pureed soooo smoothly there was no need. to this i added a bit of cream (finally finished off the pot), had to sadly add in stock cubes (i'd hoped the beef would be enough) and spices to taste. it was pretty good but still not quite what i'd imagined but then i remembered that i still had some remaining onions/mushroom/cream sauce left from the night before so i tossed that in. then i tore up the meat into small pieces when it had cooled down enough, mixed it back into the soup and voila it was perfect!
all in all i'm quite chuffed as i've managed to use up a lot of stuff that really needed using, stuff my daughter would not like, parts of asparagus that most throw away AND it was all really really tasty! :T0 -

today I'm getting my meals at work but am taking some soup in case the menu is carp:D I'll only use it in desparation as I'd rather eat their food for free.
DH and DS are using 3 assorted burgers from the freezer along with some mash and some mushrooms from the fridge.

Tonight DHand DS2 are using up some roast beef with HM yorkies, carrots and frozen peas and roasters. I'm having the above veg with a HM quorn cottage pie - I made 6 today with half price quorn mince from the freezer and some old spuds, bit of frozen veg and old mushrooms.Do what you love :happyhear0
