Old Style Afternoon Tea Party

Dear all,

I was wondering whether you had any advice! My confirmation is on Sunday and my birthday is tomorrow and I have decided to have a afternoon tea party on Sunday as a joint confirmation/birthday. I am having about 20 of my relatives round and have no idea what to give them!

I really like the idea of a high tea with scones, crustless sandwiches but am worried about the expense! Any ideas of what to serve and how to do it cheaply? (my mum and dad are bringing over lots of yummy smoked salmon so I can do salmon sandwiches v cheaply!)

Any ideas would be great!!

    Why not make open sandwiches. Half the amount of bread used or you could make small pancakes to put the salmon on. miss out the sugar and flavour them with some herbs.

    Smoked salmon is lovely served with wheaten bread and garnished with a little parsley and a few slices of lemon for squeezing over it.

    Egg and cress...cheap.......put some cucumber with your salmon........get a couple of reduced chicken breasts, cook them and allow to go cold, cut up into dice, combine in a bowl with mayonnaise, chopped onion and sultanas, use as a sandwich filling.

    Trifle, fruit and cream.....fruit flan......scones, sponge cake, fruit cake.......if you feel adventurous meringues sandwiched with whipped cream, allow one and a half rounds of sandwiches, a couple of bits of cake and a portion of trifle per person, if you make it all yourself you should manage on around £30.I used to reckon on £1.20per person to cater for an afternoon tea, the more you cater for the cheaper it gets.

    Sorry, another question- how much do I plan per person (roughly) . The majority are big strapping men and there are a few pregnant women coming so I suppose I should make a variety of sandwiches?

    Afternoon tea is my favourite subject! Smoked salmon sandwiches would be great, on brown bread with black pepper and a little lemon - yum!

    Fairy cakes are easy and cheap to make, and you can have fun decorating them. If you find some cheap strawberries, my favourite icing is made by simply mashing a few strawberries with icing sugar - it tastes delicious and is a lovely pink colour. Otherwise they can be decorated with anything sweet you have to hand.

    Humous isn't so traditional, but is easy and cheap to make - you just blend a tin of chickpeas with some of the juice from the tin, with olive oil, lemon, tahini and garlic. I can give you the recipe if you're interested. You can then use any veg you have floating in the fridge as crudites.

    In last month's Easy Living magazine they showed you how to make a cake stand - just put a sugar bowl up side down and blue tack a plate on to the top of it. It looks really pretty.

    BTW- if you have told people they are coming for afternoon tea I wouldn't think they would expect too much to eat. Just a few sandwiches, a couple of little cakes and some tea / orange juice. If you wanted you could make up a couple of jugs of Pimms. I would be inclined to keep it simple! :D

    i have recipes for traybakes if you want but the fairy cakes sound nice too
