Hi all
Tootoo - the Spanish chicken pie was delicious, thanks so much! Will be making it again this week. Not in much this week so need some inspiration of things I can take to the cinema - usually just get a pot of houmous and some sugar snap peas and baby corn to share with OH. Gets boring though!
So, here goes.
Breakfasts - for me, a boiled egg and porridge with sultanas and sunflower seeds (soya milk), for OH toast and Tesco weetabix
Lunches - OH usually takes leftovers or pasta with pesto and a few veg, I take salads or soup.
Dinners:
Sat lunch - Veggie vietnamese butternut hotpot - made this for the first time, added chilli to it and it was absolutely delicious! Recipe says it serves 4 but it served 2 of us hungry people! Only 150 cals per porton even serving only 2!
Sat - HM pizza in front of X-Factor. Normally just buy pizza but trying to reduce fat intake even more as hoping to start a family next year so need to look at our diets.
Sun - Out as going to theatre, use a Cafe Rouge 50% voucher.
Mon - Out at cinema (free screening) so probably houmous etc as mentioned above.
Tue - Changed to Pasta Fazool
Wed - Out for Orange Wednesday, so no idea what to have!
Thu - Out at the theatre again! Doesn't start till 7.30pm though so will probably go to Revolution for 2 for 1 food
Fri - Possibly at the cinema to watch New Moon? Might stay in though as seeing it with friends the week after. In which case, probably butternut risotto.
Enjoy your weeks everyone, eat yummy food!
EDIT - sparklewing could I please have your recipe for the veggie sausage and butterbean hotpot? My debt free diary | Post Office loan: £2131 1429.38 | Barclaycard: £4429 1988.12 | Paypal Credit £322.71 574.91 | Monzo Flex £169.03 |

SunnyGirl - I've had the question before, but it seems not everybody likes this recipe! I fry some mince (say 500g) and onions together, then when it has browned I add a tin of baked beans, a good tablespoon of maple syrup, some worcestershire sauce and half a crumbled stock cube (or more if you like it saltier). Add a little water if it looks too dry. Simmer for 10 minutes, transfer to an oven dish, top with the mashed potato you have made in the meantime and put under the grill or in a hot oven to finish off. That's all.
I ALWAYS put baked beans in my Shepherds Pie as its my signature recipe that mum taught me when I was growing up. It also pads out the meal and makes it stretch but adds a lovely sweetness to the lamb IMO. I use A1 sauce with mine too sometimes.
Whenever I served for others they are abit shocked I put beans in it but once they taste it, they love it. LOL
Thanks everyone for lovely mealplans this week.

Yesterday went wrong as in we ended up having a takeaway that cost £16 instead of the soup & pizza I had planned. I got in late from work & had a glass of wine & that was it, my resolve just disappeared! Quite disappointed in myself really
Anyway - we'll have the soup & pizza tonight instead, so:
Saturday – HM Country style vegetable soup & pizza.
Sunday – Brisket (SC), roasties, mash, green beans, mashed carrots & parsnips, broccoli, Yorkshire puddings.
Monday – Beans on toast with poached eggs on top. (I'm out having my hair done so hubby will cope with this)
Tuesday – HM Brisket pie, mash, carrots & cauliflower.
Wednesday – Pork chops, baked spuds, beans & tinned tomatoes.
Thursday – Egg, beans & chippy chips (I'm out till about 8pm so will call & get chippy chips on the way home & the eggs & beans will only take a couple of mins)
Friday – HM Sausage pasta bake & garlic bread.
Have a good week all x0 -

Mrsclarkie - I didn't really have a recipe for it - it was something I put together for a pancake day thing earlier this year and it was so tasty I feel like doing it again
I made some pancakes using a standard non-sweet batter recipe and cooked them. Then I put them to one side with sheets of kitchen paper in the middle to soak up some of the excess oil.
In a saucepan, I fried some cooking bacon chunks and then transferred them to a dish. In the saucepan I then melted some butter and mixed in some flour (with the bacon-y juices... mmm), mixed in milk gradually until I had a thick white sauce which I flavoured with cheese. Then the bacon chunks were added to it.
Next, I placed some pancakes in a longish dish and spooned over some of the cheese and bacon sauce. Basically I layered it up like a lasagne, topped it with a little more grated cheese and put it in the oven for about 20-25 minutes to heat through. You don't need very much of it as it is rich and it isn't the most diet-friendly dish in the world, but it is very tasty
Hope that helps.

I love your meal plans, Boodle - everything always sounds so tasty!
Can I ask how you make a mushroom wellington, please? I know I've got 'shrooms in my veg box next week and I'd like to do something interesting with them this time (usually I just cook them with garlic, or with bacon and garlic, and serve with pasta - it's lovely, but getting a bit boring now!).
Thank you!Back after a very long break!0 -
